    And the final dish with octopus was a pasta dish but i didn`t took photos of it :(

    Last night's dinner:

    Picked some beetroot and sautéed the stems and greens with onion, garlic, spinach, courgette (zucchini),mushrooms and grated carrot and added boiled beetroot, served with home made baked falafels, tzatziki and a boiled egg (evidently I had beetroot hands when handling the egg!)

    483 cals, 28g protein and I was STUFFED!

    My crowning achievement so far, and I am ridiculously proud of it. If you had told me a year ago I'd eat a plateful of something like this I'd have laughed at you, and if you'd told me I would cook it from scratch, I'd have called mental health services for you.

    Even the peanut butter on the banana and the sprinkle of dried herbs are from scratch.

    Recipe:

    Peanut butter: Coconut oil and peanuts in blender with a little salt

    Hummus: Sunflower seeds toasted in a pan with garlic, then blended. Now add chickpeas (soak overnight, rinse, put in pot with water, low boil for an hour or so). Blend those in with the sunflower seeds.

    Poblano pepper (cooked in a toaster oven with a tomato and a habanero pepper)

    Dried herbs (use dehydrator with a fruit tray to dry out jalapeno pepper, poblano, onion, and garlic, then blend in blender) - Made the day before

    Crock pot black beans - Made the day before

    Chickpeas: Left over from making them for the hummus.

    Raw mushrooms, onions, garlic, scallions, cherries, and a banana

    Looks terrific! What did you use for the chocolate ganache? Agar agar?

    Mixture of agar and gelatin, agar alone would make it too brittle. Mine wasn't pliable enough to twist into knots and stuff like i've seen, need to play around with some of the ratios

    I have iota and kappa in the cabinet, but the recipes called for gelatin + agar. Difference in a few of them was ratio of cream to gelling agents, the Alinea cookbook called for 3x as much cream as other recipes, used the one with less cream

    I whipped up some pretty awesome tasting roast carrot "steak fries" last night! Dipped them in some hummus and they were amazing! Every bit as good as french fries, for sure.

    I have no idea how to post photos, so hopefully this link works.
    I had a chicken artichoke sandwich today for lunch, made with leftover chicken breast, artichoke hearts (well drained), a tiny bit of lettuce, neufchatel cheese, and garlic powder. And bread, of course.
    Accompanying it are 12 fresh sweet cherries, and a caramel rice cake. The meal is about 620 calories, total. Sorry for the half eaten sandwich. I was very hungry.
