made jalapeno cheddar spaghetti squash and topped it with a grilled slice of quorn roast rubbed down with chili, cumin, and garlic. was really really good.
How do you make your spaghetti squash? I'm really doing my best to like it... but it always turns mushy, I find.

Not directed at me, but I always bake mine at 400 for 1 hour. Put it in a pan face down with some water. Turns out great, to me anyway.

Sometimes I roast it as described here, but when I want to eat sooner I will microwave it. To microwave it I cut the squash in half, rub the insides with a little olive oil, sprinkle with salt and pepper, and put the halves face side down in a microwave safe dish. Put a little bit of water in the dish to help steam the squash and then cook for about 5 minutes, turn the halves around, and cook in increments of 2-3 minutes or so until the squash feels done. A small squash might be done in 10 minutes but a large squash might take 20. You just gotta keep an eye on it. If you feel like it's too mushy maybe you're overcooking it? I can't say I've ever felt like mine is "mushy" but it needs to reach a certain level of softness for you easily scrape the flesh out. It's possible you're just not a fan of the texture :)
