Yikes. Touchy touchy.
I've missed A LOT of yummy posts! Wowza, ya'll are killing me.
Last night's dinner: Spinach & Feta Chickpea Burgers. I served with homemade trail mix bread, dollop of lemon-dill greek yogurt dip, and potatoes. Pretty good even though I had to substitute a different cheese since we didn't have as much feta as I though. Sad puppy.
Some older things I haven't posted yet.
Tilapia & Veggie Stir Fry with white rice and a bit of sriracha
Scrambled egg on trail mix toast with a greek yogurt spread and spinach. Good snack
This is from a restaurant in Austin called Banger's. Delish! This was the Tempura Eggplant & Red Bell Pepper Vegan Sausage served with a cucumber, onion, & cherry tomato salad with a lemon zest olive oil dressing and a side of soy caramel sauce. I also had their Jalapeno Mac & Cheese. NOMS.

The key to the deep dish pizza dough is to make it in aluminum pie tins (the disposable ones). Use 1 tbsp of olive in EACH tin and make sure it's up around the sides. Then put the pizza in a screaming hot oven (450-500 degrees). That fries the bottom crust and gives it an amazing crunch.
Not terribly healthy but.... so freaking great.
Basic Pizza Dough
Yield: enough dough for 2 medium pizzas or 4 calzones
INGREDIENTS
½ cup warm water
2¼ tsp. instant yeast
4 cups (22 oz.) bread flour, plus more for dusting
1½ tsp. salt
1¼ cup water, at room temperature
2 tbsp. extra-virgin olive oil
I put all the liquids into the bread machine bowl then the flour, the salt, and last to go in is the yeast.
