Christ, can you let me have a recipe for those please? My sons are coming to stay for a couple of days (15 and 12), and I'm trying to teach them to cook something new every time they do ... that would be perfect ... thanks!Chorizo, potato and manchego empanadas
Super easy,
If you don't feel like making the dough from scratch, just get some frozen empanada dough made by Goya, should be in your frozen foods section. After they thaw, I like to roll them out a tad thinner to fit more stuff in them.
Small dice some potatoes and chorizo (spanish chorizo, which is a hard sausage vs a mexican chorizo. I'm sure you could use either one though), heat up a pan with some duck fat or cooking oil of your choice and throw in your potatoes, season with salt. Just as the potatoes are cooked all the way throw and starting to brown, throw in chorizo and let that get crisp and the potatoes will finish browning.
Set aside filling and let cool for a bit
grate some manchego, set aside
take a little bit of the filling and cheese and place it in the middle of the dough, fold over the dough and seal with some water on your fingertip. After that, braid it, google repulgue for some videos.
After finishing all of them, you can either bake @ 375 or deep fry, if you bake them wash them with a little egg wash. Fry or bake till golden brown and serve0 -

Coconut milk Salmon Tartare - 520 cal (whole plate)
Zucchinis stuffed with onions, bread and gorgonzola - 245 cal (bad looking good tasting!)

Amazing eats everyone! As always, mine taste much better than they look *grumble* stupid phone camera...
Lazy day alfredo with way too much cheese, kept adding more because I couldn't taste it, then looked at the bottom of the bowl... pretty much a cup of straight up cheese. No shame, it was delicious.
Cookie dough nom, way more pretzels and chocolate added after the pretty picture (if I can even postpone digging in long enough to get a decent picture, everything goes to heck as soon as the camera gets out of the way)
Kale and sprouts in a spicy peanut sauce. I tend to cook easy things while waiting for things that take longer... always impatient and hungry.

Happy pancake Tuesday! I did two chocolate protein pancakes with fruit, two banana pancakes with crunchy peanut butter, one classic-style with maple syrup and added a bowl of vegetables to make my Mom proud.
Due to poor planning and memory, I made crepes yesterday too (spinach and cheese; chocolate, peanut butter and banana)

Shiritaki Noodle stir fry! Whole pack of noodles (40 calories!) + 2cups veggies (mushroom, onion, cabbage, carrot, red pepper, snap peas, etc), 2 oz. grilled chicken, 1.5 tablespoons spicy peanut sauce = HUGE LUNCH for under 200 cals
OMG that is crazy...how much was serving?
I make that for lunch and eat the WHOLE THING!!! The noodles come in an 8oz. pack (though by the time I drain and dry fry them to remove the moisture, it's about 7oz, then all those veggies (about 1 whole cup) and some sauce and usually some already cooked chicken... That whole plate is easily enough for lunch for 2 - but since I try to eat a big lunch-- it's all for me!! I'd say it's well over a pound (16oz) of food. All for 200 cals. (See my diary for specifics- I had it this past Sunday for lunch!)0 -
