One trimmed brisket (I guess this is the "before" shot)...tomorrow night at 6 PM it will be delicious ;-)
In case you are wondering, I trimmed off 2.6 pounds of fat from a 13.6 pound (pre-trimmed weight) brisket. 2.6 pounds of fat is about the size of a cantaloupe. the can of Pam is for scale.
