Starter of dutch bitterballen (=croquettes filled with beef stew) and mustard warmed up in the air fryer from the freezer. Main of vegetarian hamburgers we had in the freezer. With all the trimmings of melted cheese, pickles, mayo, fried onion you hardly notice that the patty is not beef, to be honest.

American Wagyu beef patty, mashed white potatoes skin on, super sweet corn cob and sautéed french green beans.

Wednesday:
Breakfast on the left - cinnamon raisin English muffin with cream cheese and coffee;
Early dinner on the right - vegetable rotini Alfredo with chicken and peas and a side of roasted butternut squash

Gramigna with white sausage ragu (memories of recent vacation in Bologna), air fryer roast tomatoes, green salad with leftover caesar dressing.

Repeat dinner from the weekend because I use the restaurant technique for half finished risotto which keeps about week. Second attempt at cheese souffle in the air fryer more sucessful the first attempt, served with tomato salad as a starter. Main of asparagus risotto.

Miso/mushroom broth w/udon noodles, shiitake mushrooms, bok choy, seaweed and pork belly.

We had a friend over for dinner so made more asian dishes than normal as a condiment for rice. Beef rendang I pulled out of the freezer warmed up in the microwave from a sous vide batch made last month. Fish/prawn stuffed yellow pepper with black bean sauce, where extra stuffing was used from a batch I froze the last time I made this dish. Chinese cabbage and sausage stir fry and chicken breast and snow pea stir fry were made from scratch while the rice was cooking.
The purpose of the visit was to test out cinnamon roll recipes this afternoon, so we ate our experiment after dinner. They overbrowned in the fierce top heat of the air fryer so next I should cover with foil for the first half of the bake.

Cheese souffle and roast paprika salad.

Breakfast tacos for dinner: scrambled eggs w/queso fresco and cherry tomatoes in corn tortillas. Added sour cream and Cholula green pepper sauce. Corn tortillas were from the freezer and were from otohe big bag we got at the little tortilleria a couple months ago. Still going strong.

This is pretty similar to the recipe I learned during a cooking class in Cambodia, though I would use less sugar and add a teaspoon of corn starch to the marinade slurry. I forgot to make the kyhmer lime and pepper dipping sauce.

Starter of toast, smoked mackerel pate and roast asparagus. Main of pasta shells with Italian/American vodka sauce.

Went on vacation for a week, didn't calorie count a thing, and lost 6 pounds. I'm trying to get back into the saddle at home tho.
Garlic and herby pork chops, smashed potatoes, and really meh brussel sprouts.

Tuesday dinner:
Venison stroganoff with a side of peas and carrots

Since we went out for lunch I wasn't overly hungry this evening so threw a few things on a plate for dinner. Chopped salad w/capers, olives & cherry tomatoes spritzed with olive oil. Some Iberian cured meats. Cottage cheese w/umami seasoning (primarily dried mushrooms). A rare dessert of sliced bananas with dark chocolate hummus and sliced almonds. I saw this hummus in the store and had to try it out. It's a little odd and kind of grainy but tastes like chocolate pudding. It also works with sliced apples.

Lunch - 3 cheese ravioli

A friend came over for dinner and we did air fryer Dongbei guo bao ruo and Chinese aubergine salad with rice and incidental roast shallots pulled out of the freezer, followed by chocolate sorbet for dessert.

Red beans with andouille sausage from the freezer plus rice. Chopped salad with capers, olives, campari tomatoes and some cheese spritzed with olive oil. I bought a rather large 32oz jar of capers at costco a few weeks ago so I will be adding them to a lot of things in the coming weeks. The ones I typically buy in the supermarket are only 3.5oz. But it was so much cheaper to buy the larger jar.

Pan fried sea bass, microwave/airfryer smashed potatoes, sauteed spinach. Added a picture of last night's dark chocolate sorbet that I forgot to post.

Thursday dinner: (small plate) 2 Italian meatballs, small baked potato, peas & carrots

I'm not really a breakfast or lunch person. But since I started working out, I've been starving in the mornings. This has been by go to for a few days now. 3 oz tuna with a teaspoon of mayo, cold rice and soy sauce, and half an avocado.
