There was a new sous vide machine under the tree this year. Anyone have any tips on using it? How about any recipes?

My son-in-law made us some delicious pork chops. I've never had them so tender. I'm liking this sous vide cooking technique.0

I just discovered the sous vide is great for making confit. Cooking the conventional method on stove requires a ton of duck or goose fat to completely submerge the meat, whereas one or two tablespoons of fat in the sous vide bag suffices.
