I got severl cook books from my secret santa during our family Christmas lunch and one of them is full with crock pot recipes, it is great! I havent tried any recipes from it yet, but I normaly just throw what ever I have got in it and let it do its magic, If you have a basic understanding of flavours then you can make your own recipe each night ;)

Cook a whole defrosted chicken...rinse it, take out the stuff inside the chicken, rub whatever dry seasoning on that you prefer, I use mrs dash, place on top of 5 balls of wadded up foil. This keeps the chicken from sticking to the bottom of the crock pot..I usually set it on high and go to work, so I'm not sure on exact hours probably 6? By the time I get home the chicken is falling off the bone! No added oil, butter or even stock, just your chicken and dry seasoning. You can serve it with veggies, next day as tacos, or on top of a salad or whatever...very easy and you'll have yummy chicken to be creative with for a couple of days :)

Here's my Diet Coke + ketchup chicken crock pot recipe:

    Frozen chicken breasts
    1 can of diet coke
1/2 bottle of ketchup, regular size bottle, not Sam's Club bottle.

Cook on low all day. Sounds gross, tastes good.

    I love this thread, thanks!!!

    I do a warm salsa.

    - Boil jalapenos (1 pepper per can of tomatos), dice once soft, then throw into Crock pot
    - Sautee diced green onions until soft then throw into crock pot
    - add canned tomatos (I like sweet onion, petite diced, and regular diced) to Crock pot
    - Salt and pepper to taste

Just cook it down for a few hours and stir occasionally. I cook one of these at least once a week. If you want extra pep, throw in a can of Rotel.

Outside of chili, I usually only cook my protein in the crockpot; my husband doesn't like a whole meal out of it becuase he thinks it's too bland and turns mushy.

Usually just pork loin or rump roast seasoned with French Onion Soup mix and that's it!

    Oh and grape jelly meatballs

I make a super healthy vegan soup with chicken broth, beans (anyn kind will work, I used canned navy beans, rinsed and drained last time, but black beans or red beans work great), almost any kind of diced up veggie is great in there (I last used zucchini, green beans, onions, tomato, and red bell pepper). To add something to it I will toss in diced up tofu, brown rice, white rice, orzo, quinoa... whatever you're feeling. It's SO good for you. Any kind of seasoning works--I've done a curry flavored version, sometimes I'll use a more mexican mix of spices, usually use garlic.

If it contains chicken broth, it isn't vegan. Sorry for being pedantic, but that's what I'm like.

I just made this and it's yummy. But if you like things a bit spicier, you might want to add chilies or something.

Curried pumpkin, beef and acorn squash

16 ounces chuck roast cubed and browned
2 cups cooked pumpkin (can used canned)
    1 can coconut milk
    2 cups acorn squash
    1 cup diced celery
2 tsp curry powder (or to taste)
    2 tsp cinnamon
    1 tsp nutmeg
    1 TBS onion powder

Clean then pierce acorn squash and cook in microwave on high 5-10 minutes. While squash is cooking, brown beef in a skillet sprayed with Pam or other cooking spray. When squash is done, set aside to cool. Spray crock pot and mix together coconut milk, pumpkin and spices. Add browned beef and celery. Stir. Next, cut squash in half, seed, and remove skin. Skin usually peels right away from squash at this point. Then cube squash and add to the food already in crock pot. Cook in crock pot on low for 4 hours or more, depending on how tender you like your meat. Makes 6 3/4 cup servings. Serve over steamed rice.

Entered this into MPF and it said per serving:

    200 cal, 22 carbs, 5 fat, 19 protein, 27 chol, 253 sodim

That is not including the rice of course!
