    Apricot chicken is currently cooking in the slow-cooker...will pair it with some wholewheat angel hair pasta and a spinach salad...

    it smells soooo good in my kitchen!!!

    Tonight it's homemade Vegetable Soup - Super EASY and delish:

    1 bag of organic mixed frozen veggies (the kind that has carrots, peas, corn, green beans) --or whatever sounds good to you
    1 sweet potato - diced
    1 sweet onion - diced
    large can of fire roasted diced tomatoes (28oz)
    1/2 - 1 can water
    seasonings

    place tomatoes in pot on stove
    add water
    add frozen veggies
    stir
    add potato and onion
    add seasonings (I typically use red pepper, curry, cumin, garlic granules)

    simmer til potatoes are tender.

    This is great with a small dollop of sour cream (I'm vegan so I use Tofutti better than sour cream)

    Tonight will be balsamic glazed chicken breast with a sprinkle of pecans and dried cherries on a bed of wilted spinach and oven roasted delecata squash. Yesterday's lunch was slow roasted chuck steak in a green chile sauce with carrots. Yesterday's recipe was awesome; I hope today's is good too :)

    Tonight it's 70 g whole wheat pasta tossed with a small carrot, 100 g of broccoli, a cup of shredded kale, 100g of shrimp, and 100g of goat cheese. Half dinner tonight, half lunch tomorrow

    Kinds of a shrimp linguini but more veggies.

    I'm obsessed with cottage cheese lately and finding new and interesting ways to use it and I have started making creamy pasta sauces with it. It's kind of like alfredo, but not near as bad for you. Here is the recipe that inspired me.

    I usually just dump some cottage cheese and pre-made pesto in my blender with a couple spoonfuls of the pasta water and then dump that on whole wheat pasta with broccoli. So good and filling and good for you. I tweak the recipe sometimes too. I made a good one with buffalo wing sauce the other night and put that on chicken. I'm going to make a cajun pasta one sometime this week.

    Also, this broiled avocado recipe I could eat breakfast lunch and dinner. I'm drooling just thinking about it:
