Lentil loaf!! Vegetarian meatloaf, essentially. I love making that. Also, lentil burgers or meatballs, which follow the same recipe pretty much, you just shape them differently.

I love Lentils - As a vegetarian they are pretty much the go to food! and they are sooo cheap, and incredibly nutritious too!
I agree with one poster that Madhur Jaffrey has a wealth of amazing Lentil recipes, She is basically my culinary god! :-)
Lentils are essentially a great meat replacement, as mince, in bolognaise, chilli, cassaroles, etc or in patties, sausages, 'meat'balls etc, they are also a fab addition to salads, as they add protein and make the salad really filling (rocket, brown lentils, blue cheese, mustard dressing, is a massive winner!), soups of course, you can even make houmous out of lentils, they are so flexible its madness, Most people think of them as just an indian food, but they pop up in cuisines from all over the world!

Just sent DH off to work with a belly full! My fave breakfast- lentils heated up in a skillet with onion, and leftovers-today was potatoes, but also love veggie mixes, and a fried egg in the middle. Delicious dish to power up the day.
If you boil up a bunch and keep them in the fridge, they are an easy, instant way to add great nutrients to just about anything.0 -

It's really good with some rice and a naan. Also, once it's cooled off it's also a really nice spread for on a sandwich.
Original recipe makes 8 servings
2 cups red lentils
1 large onion, diced
1 tablespoon vegetable oil
2 tablespoons curry paste
1 tablespoon curry powder
1 teaspoon ground turmeric
1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon salt
1 teaspoon white sugar
1 teaspoon minced garlic
1 teaspoon ginger root, minced
1 (14.25 ounce) can tomato puree
Wash the lentils in cold water until the water runs clear (this is very important or the lentils will get "scummy"), put the lentils in a pot with water to cover and simmer covered until lentils tender (add more water if necessary).
While the lentils are cooking: In a large skillet or saucepan, caramelize the onions in vegetable oil.
While the onions are cooking, combine the curry paste, curry powder, turmeric, cumin, chili powder, salt, sugar, garlic, and ginger in a mixing bowl. Mix well. When the onions are cooked, add the curry mixture to the onions and cook over a high heat stirring constantly for 1 to 2 minutes.
Stir in the tomato puree and reduce heat, allow the curry base to simmer until the lentils are ready.
When the lentils are tender drain them briefly (they should have absorbed most of the water but you don't want the curry to be too sloppy). Mix the curry base into the lentils and serve immediately.0 -

I grew up on Peruvian lentils made with tomatoes and cumin. I'll have to come back and read this whole thread for more lentil ideas - love them.0
