Minutes to Prepare: 5-10
Minutes to Cook: 20
Number of Servings: 12
Ingredients
3/4 cup all purpose flour
1/4 cup whole wheat flour
1 Tbs baking powder
1/2 tsp baking soda
1/8 tsp salt
1 cup mashed bananas (About 3 medium)
1/4 cup SPLENDA, No Calorie Sweetener, Granulated (Measures the same as sugar)
1/4 cup applesauce (I use no sugar added)
1 egg
1/2 tsp vanilla extract
Directions
1. Preheat oven to 350 degrees F.
2. Grease muffin tin or use paper muffin liners.
3. Combine flour, baking powder, baking soda, and salt.
4. In a separate bowl, beat banana, sugar, egg, and vanilla. Stir in applesauce.
5. Stir in flour mixture.
6. Pour/scoop batter into muffin cups. About 3/4 full.
7. Bake for 15-20 minutes or until a toothpick inserted in the center of the muffin comes out clean.
Makes 12 servings
The first time I made these I used muffin cups. It stuck very bad, next time I will just grease the pan to avoid the stick.

These are so good, they taste just like banana bread! You could even make banana bread instead of banana muffins with the recipe!

I am in LOVE with these, as a snack, in the morning, in the afternoon even at dinner! I put the batch in the freezer, when warming up I put mine in the microwave for 30 seconds on defrost. Then I top it with a little calorie free spray butter! This is worth trying! It taste amazing!

If you can get hold of some Stevia, it's a raw natural ingredient (some would say therefore even better for you than splenda) and also practically calorie free like Splenda.
Sounds so yummy!
I also like this recipe which uses oats and yoghurt for about 98 calories a muffin:

Trying these!! I will use all whole wheat flour and agave though. Might even splurge with a little real butter on top. Yum! I don't use spray "butter".
