    One of my favorites is Southwestern Chicken & White Bean Soup

    1 TBSP Canola oil
    1 lb Chicken breast (cut into 1-in cubes)
    1 can Chicken Broth (I use the Swanson 99% fat-free)
    1 cup Pace chunky medium salsa
    3 tsp minced garlic
    2 tsp ground cumin
    1 can drained white beans
    1 cup frozen corn
    1 med. onion (chopped, about 1 cup)

    Lightly brown the chicken in a pan with oil, then add to crock pot with all other ingredients. Cook on high about 4 hours or low for 6-8 hours. Makes 4 large servings or 6 smaller servings. If measured out in 4 servings, comes out to around 305 cal., 35g carb., 6g fat, 34g protein per serving.

    And if you like more veggies, sometimes I will add some sliced carrots to this.

    Kathy's Delicious Whole Slow Cooker Chicken

    1 (3 pound whole chicken)
    6 or more garlic cloves
    1 onion
    1 tablespoon pepper
    1/2 cup chicken broth
    1/3 cup soy sauce
    1 teaspoon of fresh ginger
    1/4 cup honey or real maple syrup
    1 tablespoon of olive oil or cooking oil
    1 teaspoon of Worcestershire sauce
    2 teaspoons of balsamic vinegar
    2 teaspoons lemon or lime juice
    1 teaspoon sesame oil-optional
    2 tablespoons of minced garlic

    Empty inner cavity of contents within. Pat chicken dry with a paper towel, and fill chicken cavity with onion and/or garlic. Place the chicken breast side down inside the slow cooker. In a bowl, stir together the chicken broth, soy sauce, oil, honey, Worcestershire sauce, balsamic vinegar, lemon juice, sesame oil and minced garlic. Pour mixture over chicken and cover. Cook chicken on low setting for 8 hours or 4 hours on high setting.

    For best results, baste the chicken every 30 minutes or so, and double the liquids. Also, you can marinate the chicken inside the slow cooker for about an hour before you turn it on and turn chicken a few times while cooking.

    Pork tenderloin 3-4#
    1/2 cup brown sugar
    1/3 cup low sodium soy sauce
    1 can crushed pineapple
    *1 each red and green pepper, in strips added when you get home, else they get mushy and grey! :)
    * 1 bunch slice green onion, also added in the last 30 minutes.
    Pineapple pork teriyaki! A total yum!

    Chicken Tortillia Soup (okay it has more than 5 ingredients but still simple to make)

    2lbs boneless skinless chicken breast (cut into pieces)
    1 green pepper
    1 red pepper
    2-3 jalapenos
    1 white onion
    1 can of black beans, drained
    1 can of kidney beans, drained
    2 cans of diced tomatos
    3 cans of reduced sodium chicken broth
    3 tbsp chilli powder
    1 tsp of cumin powder
    2 garlic cloves or 2 tbsp of minced garlic
    2 tbsp of fajitia seasoning

    Throw everything together, cook for 8 hours on low or 6 on high. It makes about 12 servings.

    Turkey Taco chilli

    1lb of ground turkey
    1 green pepper
    1 red pepper
    1 white onion
    1 can of black beans, drained
    1 can of kidney beans, drained
    2 cans of diced tomatoes
    1 can of tomato sauce
    1 pkg of smart fiesta taco mix

    Brown the turkey with 1/2 of the onions, peppers and some garlic, throw on top of all the rest of the ingredients. Stir, if you like it extra spicy, add some cayenne pepper or chilli powder. Cook on high for 6 hours or low for 8.

    Makes 6-8 servings
