Asparagus lovers?

I love asparagus, and would love to hear how everyone likes to eat it! I'm always looking for new ways to make veggies even more delicious.

When I was younger it was often a side dish, though it was usually asparagus and cream. Not particularly healthy but still delicious. Now I eat it straight up, but I'm looking for ways to convert friends to the awesomeness of this lovely green veggie.

How do you eat asparagus?

Best way, imo, is grilled with a little olive oil, salt, and pepper.

I normally grill it, then serve it with one or more of the following

    Laughing cow cheese
    Red onion
    Parmesan or Romano cheese
    Prosciutto
    Figs, honey and Persian feta
    Orange glaze
    Seeded mustard

This, but roasted in the oven.

Leftovers, on the rare occasion there are any, make a good omelette.

Stir fry on a skillet with some Shichimi Togarashi seasoning, goat milk butter and a some fried onion flakes. I usually have it as a side to eye of round steak and katsu or ponzo sauce.

I lay them flat in a shallow glass baking pan... melt 1 tsp of margarine and brush it over top, sprinkle garlic potato topper (from Epicure Selections) over top, and bake at 350 for about 12-15 minutes.

    It's my new favorite!!!

pressed garlic and some form of citrus zest (orange is really good with it) and a tiny bit of olive oil. Grilled or oven roasted.

Sauteed in olive oil with salt, pepper, and garlic. Then add some grated parmesan/asiago/romano/whatever cheese.
Occasionally just grilled, but the above is my favorite.

    Yum.

 straight out of the can works for me. But, normally I roast it in a drizzle of olive oil, salt and pepper.

I like to wrap it in foil, drizzle some EVOO over it, add some salt/pepper and bake it. Then sprinkle some Fat Free Feta cheese over it.

LOVE Asparagus! Can't wait til I have a deep freeze and can buy in bulk.

I like to saute some garlic in olive oil then coat the spears, wrap a couple in Proscuitto, sprinkle with a little feta cheese and bake in the oven.

This is my favorite, I use Jarlsberg cheese and a smidgen of crushed protein croutons on top after a slight time in the oven.

Broiled or grilled with a light spray of olive oil, a pinch of salt and garlic powder. Sometimes I skip the garlic. Either way, YUM.
