    My husband and I have had it steamed and raw in a smoothie.

    I LOVE LOVE LOVE kale. Always have, even as a kid. I had it almost every day when I was pregant. I've always had it lightly steamed, with a little salt/and or bacon. Works great with crumbled up turkey bacon since that's so salty anyway.
  • I have eaten it baked in the oven, tossed with a little olive oil and seasoning, and also just raw in salad!

    I've had pretty good results with baby kale. I toss it with some bacon grease & massage it in pretty thoroughly & bake for 5-10 minutes. No extra seasoning needed. I leave the ribs on for a handle.

  • Quick stew: saute kale in a little olive oil then add 2 cans of low na diced tomatoes or fresh diced tomatoes, some garlic, red pepper flakes, and a can of drained and rinsed cannellini beans.

    I make baked kale chips and sprinkle a little bit of parmesan cheese on them a minute or two before I take them out of the oven. YUM!

    Kale chips are AMAZING!!! Just made some again today!!! remove large vein in the middle and mix with a little olive oil, sprinkle with salt, bake @250 for 30 min... I cook mine on a wire rack so you dont have to flip it.. try it!! You will love it!

    Sauteed with onions, bacon grease, a touch of brown sugar, apple cider vinegar and dijon mustard.
    this, plus a little spinach sometimes

    also, i make a home made version of Zuppa Tuscano (the soup from olive garden) and use tons of kale in it

    In a smoothie with mango and almond milk. raw in a whole wheat pita with brown mustard. Just kale and mustard is Yup.

    How I eat it as well. Love Kale Salads!!! I also make smoothies out of it with apple, carrot, frozen fruit.

    GI Nutrition recovery (bcaa, glutamine, creatine ....)


    I realize this sounds quite gross, but it is actually delicious, healthy and noticeably improves my recovery

    Blended raw in a smoothie and as kale chips

    Another MFP friend gave me this and I just had as a snack...yummy

    Kale Chips (basic recipe from Hungry Girl)

    1 bunch kale. Wash, dry COMPLETELY!!!!
    Tear leafy part from stems. Discard stems.
    Lay leafs in single layer on cookie sheet.
    Spray leaves with cooking spray ( I use Pam olive oil) season.
    (I'm currently into a light dusting of Seasoned Salt)
    bake in pre heated 425 degree oven 5-8 minutes (really watch them b/c 8 seemed to be too long last time and not enough this time)

    Also add it chopped with other veg (tomatoes, pepper, onions) to an omelet for breakfast

    In soup/stews (yummy)

    Massaged in a salad, chopped in a soup, baked as a chip and my most favorite of ALL time is this creamed kale. Absolutely phenomenal!

    i like the idea of adding it into an omelete. i love many crazy multi veggie omletes :)

    Kale chips, steamed with salt, sautéed with oil, onions and garlic, in smoothies, juiced, raw in quinoa salads. It's an amazing food!

    Kale is the best (green) food to eat. Actually eating dark leafy greens is always good. My husband loves kale with shreaded cabbage. In the morning I sautee 1/3 cup vegan choizo (purchase at walmart real cheap) and some chopped, 1 tbsp red onions, add Kale chopped and then add 2 parts egg whites and 1 whole egg for a quick breakfast and 1 slice of wheat toast, or make into a breakfast burrito. Real good!

    For dinner I sautee kale & fresh spinach with red or white onions splash of soy sauce or if you like use the vinagar from a jar of yellow hots, salt & pepper to taste. you could also add a couple of dice red bell pepper, slices of zuccini (green & yellow) and serve with a grilled chicken breast or lean meat.
    OH also great in a tuna fish sandwich. Use Kale leaves instead of lettuce can't tell the difference. I could go on and on but this is a good starting point hopefully this will give you some ideas.

    I just recently started eating tuna fish sandwich with romaine lettuce i will def have a go at it will some kale the next time around.

    kale chips or sautee them and mix them with ricotta cheese. Then put the kale/ricotta mixture into phyllo cups and bake in the oven.

    I like it raw with tahina dressing (like Annie'sGodess) withy crunchy sprouts OR slow cooked with cayenne and ham hocks. Yeah, I'm weird.

    I eat it raw almost daily, doesn't bother me at all. I make salads with it, put it into wraps, on sandwiches/burgers, tacos, etc.

    Kale chips! I drizzle an itty bitty bit of olive oil on it with a very tiny bit of salt. When I say tiny bit of salt, I mean it! It's better to add salt later when you're eating it than having to throw away a whole thing of kale because it's too salty... Then I put them in the oven...I can't remember for how long or at what temperature...but google it! It's very easy! :)

    You could try this recipe, if you like pineapples you will like this dish.

    Kale - 3 cups chopped
    Spinach - 6 cups chopped
    Onions - half cup chopped (I use red onions)
    Minced Ginger Root - 1 Tablespoon
    Minced Garlic - One Tablespoon
    Pineapples - 2 cups (I use Dole Pineapples with no added sugar, you could use fresh pineapples)
    Cumin Powder - 1 Teaspoon
    Coriander Powder - 2 Teaspoons
    Chilli Powder - To Taste (I like it really hot)
    Green Chillies - To Taste
    Avacado Oil - 1 Tablespoon (You could use any High Heat oil)
    Cumin Seed - 1 Teaspoon
    Sesame Seed - 1 Teaspoon
    Salt to Taste
    Tomatoes - 2 Large
    Raw, Unsalted Nuts - 2 Tablespoon (I like to use Pecans) Cashews or Slivered Almonds go really well with this dish. Dry roast this and keep it aside.
    Lemon or Lime Juice - 1 Teaspoon

    Method
    Heat oil in the pan
    Add Cumin Seed and Sesame Seed and wait for it to crackle
    Add chopped onions and saute it till golden brown
    Add Ginger, Garlic and saute for 2 minutes
    Add Green Chillies
    Add Chopped Tomatoes and cook for few minutes
    Add Kale
    Keep mixing this until Kale starts to get soft
    Frequently mix Kale till it's half way done
    Add Spinach and and the dry spices (Cumin, Coriander, Chilly Powder and Salt)
    Frequently mix it till spinach starts to wilt
    Add Pineapples at this point and cook this till Kale is fully done.
    Put this in a serving dish and add lemon or lime juice and garnish it with dry nuts.

    It goes well with Quinoa or Cracked Wheat.
