Anyone got any cauliflower recipes? I have a head of cauliflower and nothing to do with it. Thanks in advance!

Cauliflower Mash – Substitute for fattening mashed potatoes.
· Serving size 1 cup. Makes about 6 servings. Calories per serving (90)
· College Inn –Chicken broth fat free 50% less sodium 1.5 cups
· Quaker Oats – Old fashioned Oatmeal – Dry ¾ cup
· 4 Tsp of Dried minced onions
· 3 Tsp of Black Pepper
· 2 tsp. Mccormick –Perfect Pinch Roasted Garlic & Bell pepper seasoning
· 1 Tablespoon of Ground Cummin
· Sazon con cilantro y achoite 2 packets
· 1 whole head of Cauliflower (steamed to soft)
· 4 cups Baby Spinach
· 1 cup of frozen peas.0 -

You can also add to the mash, instead of the listed spices, Hidden Valley Ranch seasoning packet, buy this raises the sodium and the calories some. But it tastes great and you can eat it as a side, like mashed potatoes, or throw it into an Omelete, or whatever. Fry it up with some ground turkey would be good too, or put it in a wrap.0

1 cup cooked, riced cauliflower
1 cup shredded mozzarella cheese
2 tbls grated parmesan cheese
1 egg, beaten
1 tsp dried oregano
1/2 tsp crushed garlic
1/2 tsp garlic salt
½ tsp red pepper flakes
To "Rice" the Cauliflower:
Take 1 large head of fresh cauliflower, remove stems and leaves, and chop the florets into chunks. Add to food processor and pulse until it looks like grain. Do not over-do pulse or you will puree it. (If you don't have a food processor, you can grate the whole head with a cheese grater). Place the riced cauliflower into a microwave safe bowl and microwave for 8 minutes (some microwaves are more powerful than others, so you may need to reduce this cooking time). There is no need to add water, as the natural moisture in the cauliflower is enough to cook itself.
One large head should produce approximately 3 cups of riced cauliflower. In a medium bowl, stir together 1 cup cauliflower, egg, grated parmesean and mozzarella. Add oregano, crushed garlic and garlic salt, red pepper flakes, stir.
To cook all 3 cups then triple the recipe. It did become a little wet so we added just a little bit of cornmeal. Next time we are gonna leave one egg out so we don't have to add the cornmeal
You then can either make one large pizza or we separated it into 2 smaller pizzas. Cook the crust first separately for 15 minutes on 450 degrees. Then add your toppings and cook until desired darkness on 350.
For this particular pizza, I put a little bit of bbq sauce down as a base layer then covered it with spinach, tomatoes and light cheese then I mixed bbq sauce and precooked chicken and added it to the top and topped it with just a little bit more cheese.
Any toppings would work I believe! Enjoy!
Oh if you leave out the salt, you cut down on lots of sodium...found that out the hard way unfortunately

I made pizza crust the other day out of cauliflower and it was delicious.
Chop up cauliflower and pulse it in a food processor, bullet etc. or you can use a cheese grater. Don't do it for to long or it will turn into a puree.
It will be grain or rice like.
Put in a bowl and microwave for 7-8 minutes
Take it out and add:
2 eggs
Parmesan cheese
Mozzarella cheese
Red pepper flakes
Garlic powder
Stir and press down onto a pizza pan
Bake at 400 for about 25 minutes
Take it out and add pizza sauce and toppings of your choice, and more mozzarella cheese.
Bake again until cheese is melted.

Oh these look great!! I may try the cauliflower mash tonight as that is the only thing i have all ingredients for. Will be trying the pizza this week! Also will have to try everything else. I love cauliflower. Thanks everyone!0

Okay, here is one from Wheat Belly cookbook:
Better than mashed potatoes
1 Large head of cauliflower, cut into florets
2 oz cream cheese (the real stuff, not ff or lf)
2 tbsps Real butter
1/4 tsp sea salt
Place a steamer basket in a large pot with 2" of water. Bring to boil over high heat. Place the cauliflower in the basket and steam for 20 minutes, or until soft.
Remove from heat and drain. In a blender or food processor, combine the cauliflower, cream cheese, butter and salt. Blend or process until smooth.
Makes 4 servings
Per serving: 152 cals, 5g protein, 11g carbs, 11g total fat, 7g Sat fat, 4g fiber, 297mg sodium

Super tasty...I make it over and over again...a great go-to pre-workout snack in my opinion. Very filling! I don't add the cheese, bacon, and I never have chives on hand. I sometimes crumble a few saltine crackers in.

Roast it in a pan in the oven with a bit of oil, salt and maybe garlic powder. Roast for about an hour on 350 and it's soooo YUMMY!!! I do this with all veggies and they are to die for. Sweet potatoe, turnip, cauliflower, broccoli, green beens & brussel sprouts.0

Absolutely love this very simple recipe:
Faux mashed cauliflower
1/2 head of cauliflower - broken into smaller pieces
2-4 tsp olive oil
salt & pepper
Boil cauliflower in 1 cup of water until soft (about 10 minutes.) Place in food processor with 1 tsp of oil and 1 tablespoon of the cooking water. Start processing and add 1 tsp of oil every couple of minutes until you get the consistency of mashed potatoes. My food processor is quite old and this takes 5-8 minutes for me. Salt & pepper as desired.0 -

Oh my favorite vegetable! Steamed then chopped up with low fat mayo, low fat parm and pepper the best! Quartered and soaked in italian dressing and grilled yum. Or just cut up and dip in low fat dressing of choice. Steamed chopped with marinara sauce is good. Stirfry with noodles and shrimp.. With eggs.. Baked with garlic and olive oil, fresh garlic..0

easy peasy cauliflower mash
head of cauliflower
garlic cloves
boil them till soft
once cooled put in blender with
mayo and sweet and low
done
Curry Roasted Cauliflower
Ingredients
1 head cauliflower, cut into small florets
1-2 tablespoons extra virgin olive oil
1/4 teaspoon salt
1/8 teaspoon freshly ground pepper (I used cayenne pepper for more heat)
1 tablespoon curry powder ( or to taste)
Optional--One can drained chickpeas (as dry as possible)
Directions: Preheat oven to 450. In a bowl, toss the cauliflower pieces with oil and seasonings and spread on to foiled baking sheet. Roast for about 20-30 minutes, shaking the pan halfway through. It's done when the cauliflower is just tender and browned, and the chickpeas are slightly crisp. Enjoy as a snack, side dish, or in a salad.0 -
I make my faux mashed potatoes a little differently.
I boil my cauliflower till very tender. Drain and add a little cream cheese, butter and garlic powder. Beat with mixer or in blender. Blender makes it creamier but I don't mind a little texture. Sometimes, I skip the garlic and add shredded cheese. I like cheddar but mozzarella is just so darn creamy!0 -

cauliflower and Ham Bake
6 cups cauliflower
6 oz. Velveeta cheese
2 cups extra lean ham, cubes
Mrs. Dash
Cook cauliflower. Cut cheese and ham into cubes. Mix together and bake at 400 degrees for 30 minutes or till bubbly.
Cheesy Cauliflower Soup
4 cups cauliflower, parboiled
2Tbsp butter
1/4 cup onion
2 Tbsp flour
3 cups chicken broth
2 cups skim milk
2 oz. Shredded cheddar
Cook cauliflower in minimal water until partially cooked. Sauté onions and butter in saucepan till yellow. Blend in flour. Add chicken broth, milk, cauliflower and the water the cauliflower was cooked in. Cook until mixture thickens slightly. Add cheese and stir till melted.
Faux Fried Rice
1/2 head of raw cauliflower, grated (about 3 cups)
3 green onions
4 cloves garlic, minced
2-3 Tbsp soy sauce
1/2 - 1 tsp garlic salt
3 eggs, beaten
Oil
Pork, chicken or shrimp, cooked
In a wok or large skillet, heat enough oil to cover bottom of pan. Fry minced garlic and white part of onions for approximately 1 minute. Add cauliflower and fry for about 5 minutes stirring constantly. Add soy sauce, garlic salt, green onion tops and meat. Stir till mixed. Push mixture to side of pan. Add more oil if necessary, and scramble eggs in empty side of pan until done butstill moist. Stir eggs into "rice" and remove from heat. Serves 3.0 -
Steam cauliflower til it is able Tim be smashed with a fork. Add a little low sodium chicken broth, beat as you would when you make mashed potatoes. You can eat it like mashed potatoes and its basically 0 calories!0
