    im a vegetarian so i used it as my taco filling and seasoned it like i would the ground beef.

    highly recommend.

    i also used it in buffalo "chicken" dip once as the binder that the chicken would be. it was delicious - texture was obviously different - but my meat loving husband still ate it.

    Corn, cilantro, onion, and tomato are essential- then anything else you want! Serve with black beans. I'm currently living in S. America, where it's from and common. If they dress it up at all, this is pretty much what I see... corn, corn, and more corn!

    This is how I am eating quinoa this week:

    Quinoa and Peaze

    -Arrowhead Mills - Organic Quinoa, 1 container (3 cup dries ea.)
    -Organic Sweet Peas (frozen), 2.5 cups
    -Organic - Yellow Onion, 1 onion (148 g)
    -Spice World - Minced Garlic, 3 tsp
    -So Delicious - Coconut Milk - Unsweetened, Organic, 1 cup (240mL)
    -Wegman's - Organic Raw Cashews, Bulk, 1/4 cup
    -Red Star - Nutritional Yeast, 1.5 Tbsp (1 serving)
    -Sea Salt, 1/4 tsp (1.2 g)
    -Wegmans - Organic Yellow Mustard, 1 tsp

    Cook the quinoa as directed, sautee the onion with a little cooking spray, add the peas to the onion to thaw. Mix the other ingredients in a blender and pour over quinoa, peas, and onions, and mix together.

    Makes 10 servings of 1.25 cups each.
    Per Serving: 212 calories, 36g carbs, 5g fat , 9g protein, 4% calcium, 24% iron
