    I cook a large batch of white quinoa every Mon to use in a number of recipes throughout the week that will feed a family of 4. I use it in chicken salad, as a substitute for white rice to pair with stir fry, with beans, in hot soups, with grape tomatoes/dried fruit/nuts as a cold salad, etc. We love it. :)

    Quinoa Salad
    1 cup quinoa, cooked
    1/2 cup dried cranberries
    1 red pepper, diced
    1/2 cucumber, diced
    1/2 med onion
    1/2 cup sliced almonds
    juice of 1 lemon and its zest
    1 tbls of olive oil
    salt and pepper to taste
    You can add in any other herbs of your choice (parsley, thyme, etc). I used fresh basil!

    Makes 5 cups, 1 cup serving:
    Calories 235
    carbs 29
    fat 18
    protein 7
    fiber 5

    I absolutely LOVE anything Greek-Inspired, and quinoa, cous cous, or whole-wheat pastas pair wonderfully with those type of flavors. The following, combined to make a salad, is heaven in a bowl.. !

    Quinoa
    Feta Cheese
    Cocktail Tomatoes
    Dill Spice
    Kalamata Olives
    Grilled Chicken or Tofu
    + Favorite Choice of Seasonings!

    I sautee some onion and garlic and capsicum and then cook it in stock and add the vegies. Can add some diced chicken as well.

    One of my fave brekkie recipes:

    Quinoa Breakfast Bake

    Ingredients:
    1/2 cup Quinoa
    2 Egg Whites
    1/2 cup Skim Milk
    1 scoop Vanilla Protein Powder 30g
    75g Frozen Berries (or fresh)
    Method:
    1. Soak Quinoa for about 10 minutes, wash and drain.
    2. Whisk Egg Whites.
    3. Add Skim Milk and whisk in the scoop of Protein Powder
    4. Add Quinoa and mix thoroughly
    5. Pour into oven proof dish. Sprinkle fruit evenly over the mixture.
    6. Place in pre-heated moderate oven (180C) and bake for 20 minutes.
    7. Eat warm - easy to prepare the night before and serve with a dollop of yoghurt and sprinkle of LSA.
    8. Delicious!!
    It is a touch dry... I heat in the morning with a bit of water to soften it a bit, but I like a bit of crunch. Tastes great!!

    I usually put tofu, corn, green beans, and some seasoning in it. I've recently starting eating qunioa, so I'll have to try some of these recipes!

    I made Peanut butter quinoa cookies the other day, they were not bad. Mine was missing something I didn't had dark chocolate chips like it called for and I used creamy peanut butter instead of chucky but I'll make them again and add raisins or crasins and use chucky!

    I like to put it in any curry I make. It soaks up the curry/coconut milk and is delicious. :)
