Best Dinner I Made This Week!

...According to my husband and the kids! It has probably been posted on here before, but here it is:

Taco Soup - (from Weight Watchers I believe!) - 2 points per 1.5 c. of soup and approx. 210 cal.

1 Onion - cut up
1 Green pepper - cut up
1 lb. to 1.5 lbs. ground hamburger, chicken, or turkey

Cook the above in a pan. When using hamburger, I skim the fat off when done. Add:

1 package taco seasoning mix
1 package Hidden Valley Ranch dressing mix

Stir. Transfer mixture to a crock pot or a big soup pot for the stove. (I prefer a crock pot!)

Add:

1 can of corn -undrained
1 can of Mexican diced tomatoes - undrained
1 can of diced tomatoes - undrained
1 can of kidney beans - undrained
1 can of pinto beans - undrained

Let this simmer for a while. When ready to serve, add a tablespoon of light sour cream or grated cheese. Tostitios are a great add as well and offer a satisfying crunch. Enjoy!

    I believe it is 2 points per serving ( minus any of the sour cream/cheese/tostitos - those are my own vices. Sorry!) and about 210 calories.

    I make a really similar recipe that a friend gave me...I think she said she got it from Weight watchers, too, but I think it was 1 pt./cup (could be wrong)

    Brown 1 lb hamburger or ground turkey (drain)
    Add taco season pkt

    In a soup pot add:
    3 cans Rotel
    2 cans black beans
    1 can kidney beans
    1 can whole kernel corn
    1/2 another pkt of taco seasoning

    It's more the consistency of a chili, and SOOOOOO yummy!! We usually add diced chiles or jalapenos for extra kick, and also add sour cream, cheese, and tostitos on top, occasionally.

    LOVE this recipe. I have been making it for years. I try to find all no salt/low sodium ingredients for this recipe. Also very popular with my teenager!

    Hmmmmm could you make this recipe without the meat or do you think the seasoning in the Hidden Valley Ranch mix and Taco mix will seem to salty without it??

    I've just made this - but I agree - more of a chili consistency - I always drain and wash the beans (removes some of the gassy agents that way). I may add water later - or not.
