    I made this with:

    1 box Devil's Food Cake
    1 can Diet Pepsi
    12 tablespoons chocolate chips

My in-laws said they were amazing. When I told my mother--in-law how I made them, she was shocked and they were some of the best cupcakes she has had! The chocolate chips gave them that decadent ooey-goey taste that made them taste like a super high calorie dessert.

It made about 24 cupcakes, 125 calories each.

My son made a bundt cake for a potluck at church this past Saturday. I turned out really good. He took a little chocolate frosting and added a little Diet Dr. Pepper pop to it and melted it on the stove and drizzled it over the cake. Yummy!

Bumping it for My Topics - this is on the menu for this weekend!

Anyone have more details on the Pumpkin version - I have a Spice cake and a can of pumpkin but I don't know if I have to add the egg?

A little late but no, you don't have to add the egg. I also made this using a devils food cake and pumpkin. I didn't like it as much as the spiced cake but it was still good. I am going to make the soda cake tonight. mmmmm

My hubbz made a soda cake for my 30th birthday and it was really good!
    No egg whites used.
    Reduced sugar chocolate cake mix.
Pepsi Max soda... that's about it. So moist and so yummy!

It does come out flat without the egg whites but it's still soooo good!

The science of it is the carbonation of the diet soda causes the cake mix to rise. it provides the moisture too, the cake mix has everything already. therefore the calories of the mix alone as shown in the package is divided by 12 and you get your calories per serving. It is not health food, just an option to answer a sweet tooth craving with less calories. If you make cupcakes with it, use the foil cupcake liners not the paper and use a bit of spray in each liner to have stick proof cupcakes. it will stick terribly to the paper ones.
