What causes you to fall off the wagon?

Usually when I stress out too much about my calories and exact measurements I fall off the wagon. I noticed that I make healthier choices when sometimes I let some of the measurements round up (always round up).
I was maniacal before about counting every single thing, and I actually gained weight, then stopped counting all together.
It's not the fastest approach, but I know with these changes I'm much more likely to keep myself on track.0 -

I allot myself one day of over-indulgence a week, within sensible limits, but sometimes I get these cravings for chili cheese fries or loaded nachos. Mmmm...nachos...more than a full days calories packaged into one meal. That's a bit much even for a splurge day.0
