    carmelized onions
    sauteed / grilled mushrooms

    stick in oven or toaster oven to heat up cheese and crisp the pita... mmm good.

    Thomas' Everything Bagel Thin (toasted), one or two eggs cooked however you like, Laughing Cow cheese (although I buy the version at Aldi for half the price) as a spread = super yummy egg sandwich. Actually I like it on any type of lunchmeat sandwich. Or with crackers of course.

    I spray a custard cup with Pam. Add 4 oz sliced mushrooms, mic 1 min, drain liquid. Add 3 Tbsp Eggbeaters (love the Southwest or new 3 Cheese) add 1 Laughing Cow wedge (any flavor--the Weight Watcher jalapeno wedge is good, too) mic 2 /12 min. Dump out onto a toasted light English Muffin. Cheese gets all soft and gooey-yum
