Scrambled eggs in the microwave?

I stir two egg whites in a bowl and cook about one minute, stirring at least once. ( check every 30 secs at least). Then I sprinkle a pit of Parmesan cheese on top. Sometimes I will stir just a bit (1/2 tablespoon) of per cooked bacon bits in the egg before cooking.

As long as you keep mixing they do scramble properly just like in the pan. I'll have to take a pic next time I make mine to show0

I sometimes dice up some Eckrich-style turkey sausage in a shallow bowl, and microwave it for about 30 seconds, then add an egg or two and microwave, stirring every 30 seconds, till desired doneness. You can top with a little shredded cheddar, and it is great. The little grease from the sausage coats the bottom of the bowl so it doesn't stick as much. Only one bowl to wash, and super quick.0

Even better? Half cup of liquid egg whites in a microwaveable bowl. Heat up for 90 seconds, remove, top with a slice of ultra-thin Colby Jack or 1/4 cup fat free shredded cheese and maybe a tbsp of bacon bits. Heat for an additional 30 seconds, remove, sprinkle with Cholula, and scarf. Voila! Low-carb breakfast bowl!
With ultra-thin cheese slice: 132 cals, ZERO carbs, 5g fat, 18g protein
With shredded cheese: 182 cals, 1g carb, 8g fat, 24g protein
Have it with a piece of wheat toast and a tbsp of natural chunky peanut butter for a nice filling breakfast!0 -
I make them all the time. It's quick, they do have a bit of a different taste though. Just take them out and mix them every 30 seconds or so until they're done.0

I take egg whites and cook them the microwave every morning. I top them with a fat free cheese slice, baby spinach and some sort of protein. Very filling.0

If you like egg sandwiches you can make up a bunch on the weekend on the stove top, wrap the sandwich up in plastic wrap and put them in the freezer. Then when you are ready to eat them take off the plastic wrap, wrap them in a paper towel and then microwave them for about a minute. I do this so my 10 year old son can make something quick for breakfast. I use bacon, egg and cheese english muffins.0

Easy peasy lemon squeezy. I make them in a shallow bowl and eat straight from that bowl.
All sorts of variations - spinach, mushrooms, tomatoes, all wont need any extra cooking beforehand (though I sometimes chop them and give them a quick 20 second blast in the same bowl before adding the eggs.)
1 or 2 eggs. Sometimes 1 egg and a glug of egg whites. Don't need oil, water, milk or butter. Season. Microwave 1 minute then stir. Continue in blasts of 20 seconds until done. Add some cheese before the end if desired, either a cheese wedge, or a sprinkle of grated parmesan/ cheddar.0 -
I have an egg sandwich everyday after the gym before work using the microwave. I have a little round glass bowl (about 4-5 inches across) that I spray with olive oil cooking spray. Crack one egg and add a little milk. Stir it up and I cook it for 2 minutes on half power. Comes out great, and fits perfect on my bread since I use the little round bowl.
If you're adding veggies you'll need to cook them first or else they'll still be raw/crunchy
Make sure you don't overcook them or they turn into rubber.
This is what I do. I add whatever veggies I have on hand. I saw the "recipe" in a magazine a few years back. I don't pre-cook my veggies, usually add torn spinach, halved grape tomatoes and chopped broccoli. Oh and some of cheese, usually a sprinkle of parmesan.0 -
I have had eggs in the microwave many times. I just recently found out in my Nutriton class though that using the microwave denatures any protien. So sure sure its quicker but it rids everything of its nutritional value.0

YES! Eggs in the mircrowave are my fast way out of the house with a good breakfast in hand. I make them in a mug to get them to fit on a muffin/bagel. Mix the cheese and veggies straight in, pre-cook bacon though but ham works well. I tend to stick with bacon or ham and shake it up with the veggies, seasonings, and cheese. My husband just started making them in a ceranmic bowl - he likes that shape better. I made them in a ramkin the other day and transferred them to a plastic bowl so my kid could take them to school for lunch.

Another way is to cook up a batch in a silcon muffin pan in the oven, put them in bowls and eat them all week. You could individualize each muffin cup and have a different breakfast every morning. Think quiche with more variety.0 -
they get very fluffy, no extra oil, and they cook quickly!

Ok..there is this little container you can get at Walmart...it's meant to make egg patties for breakfast sandwiches. I have found it to make a pretty decent "not runny but not over cooked fried" egg....it takes all of 40 seconds...they're delicious. The container is $2... I like it cuz if the egg ever pops or blows up a bit, it is contained. Of course...a bowl and mug work well too but make sure to cover it =p

Make sure you spray the bowl or put something to keep the eggs from sticking....it's a (female dog) to clean if you don't x.x
I've eaten eggs like this for years, takes 3 minutes with the weakest microwave and you just need a fork and a bowl.0 -
I bring a raw egg, sliced turkey and an english muffin to work every day and just use one of the disposable plastic or paper bowls mix the egg with a little pepper 1min on high and its a perfect size for my english muffin. and it doesnt matter if it sticks to the bowl because you just throw it out.0

I have them every day - 1 egg w/ 6 tablespoons egg whites, no veggies, and it's the perfect shape to put on my thin roll. I cook them for about 2 minutes otherwise I think it's a little runny on the bottom and I like my eggs cooked through. I'll micro 2 slices of turkey back to put on it too. Not as good as using a pan but decent. I use this thing that I found at Walmart:

I also can't seem to find any research to the claims microwaves kills eggs...
I have never heard this so if it's true I would love to know.... but I am leaning towards microwave eggs are yummy.
Just please please please do not overcook them or use high power. NOTHING will make an office smell worse (maybe fish over cooked in a microwave...)0 -
I make what I call a scrambled egg omelet. I stir up an egg (or two) add some Bacon bits and shredded cheese and cook it for 2 minutes. Then I eat it on a muffin or a sandwich round. It's pretty good for a microwave meal. It also keeps me full longer than my usual breakfast of yogurt and fruit.0

I do egg whites in the microwave everyday. I make my own egg McMuffin - two large egg whites, thomas english muffin (just the regular one - I don't care for the texture of the multi grain or whatever it is), ff cheese - and a ruby red grapefruit on the side! love this breakfast.0

Here is my secret breakfast recipe. Frozen asparagus broken in half - microwave for 30 seconds. Add one egg and raw baby spinach - microwave for 30 seconds. Mix it up with a fork a little (Will still be soupy) and microwave for 30 more seconds. Put between two pieces of toast with a slice of cheese. Generally my toast and eggs are done at about the same time and it takes 1.5 minutes. Contains about 375 calories and satisfies me until my 10 am snack time.0

My mom used to do this all the time. Still does I think. I don't eat eggs frequently enough, usually only on the weekend when cooking for more than myself so I stick with the skillet.0

All cooking denatures protein. The microwave has no impact on the nutritional value of food.0 -

I always do my scrambled eggs in my microwave ~ they are ace sometimes just for taste i add a tiny bit vitalite spread in at the end to melt in yum & if you fancy a change make up a couple boiled eggs & mash them in a cup with either low fat spread or some light Mayo just as nice0
