This sounds great, I just boiled eggs to make egg salad with - do you know what the sodium count is?
ConnieThis recipe has become a recent favorite of mine, so I thought I'd share! I love that it's high in protein. It also happens to be low in carbs for all you low-carbers out there! It's very customizable; I just made this with what I had on hand. The main secret is using greek yogurt instead of mayo (you won't miss the mayo, trust me).
Recipe makes 2 servings. You'll need:
2 large eggs, hard boiled, chopped fine
1/4 cup plain nonfat greek yogurt
1 dill pickle spear, chopped fine
1 tsp yellow mustard
Salt, pepper, paprika, or other sesonings to taste
Any other veggies you want (onion, cabbage, etc.) chopped fine
Stir together all ingredients in a bowl until well mixed. Serve however you'd like; I usually eat mine on whole wheat bread for a sandwich, or use a whole wheat tortilla to make a wrap. Makes 2 servings.
Per serving: 88 calories, 2g carbs, 5g fat, 9g protein

I do a similar recipe but I replace the yogurt with avacado or humus. I don't do as much dairy so it is a good replacement and it gives it a creamy texture.0

I also use avacado or humus when making deviled eggs too.0
