Make "bean dip" out of anything. - cauliflower, broccoli, lentils, peas, avocado......just add cumin, garlic, onion, red chili powder....
and dip with celery, carrots, cukes, etc. Even my kids like this.0 -
Hi - i love mexican also :-) If you check out the food list, i've added a recipe for Chicken Fajita Casserole. It's always a hit at my house even with two young kids! It can be eaten alone or with tortilla chips.0

Tacos de arrachera
You will need
Arrachera (skirt steak)
[you will need cilantro, onion, lawrys season, and lime to marinade]
tortillas
guacamole
queso fresco (<--mexican crumbling cheese)
salsa
grab a big enough container where the meat will fit. Season the arrachera with with lawrys and lime. place a layer of onion and cilantro first, then meat, then onion and cilantro again, then meat well you get the picture. Fire up the grill and grill those babies. Warm up your tortillas and create your tocaos topping them up with guac, cheese and salsa.. YUM0 -

Here's a version of salsa I make at home: Roast the tomatoes, onion, garlic, and jalapeno all drizzled with olive oil in the oven first. Then remove the skins from the tomato and jalapeno. If you want it spicy leave the jalapeno seeds, otherwise remove them for mild. Put all of that with cilantro, salt, pepper and more olive oil in the food processor and serve either warm or cold.0

I mix together brown rice, black beans, salsa and a little taco seasoning. Put in a tortilla and fold into a burrito. Top with a little extra salsa or taco sauce.0

I'm going to a mexican restaurant tomorrow evening for dinner, what do you suggest?
I don't really like fish, so was thinking maybe just a salad, but considering I eat salad for lunch / dinner most days, it'd be nice to have something different.

We have tacos once per week in our house. Most of the time fish tacos, and that's one of our days to get fish in . I don't eat any grain or startches due to digestive issues, so I make the below tortillas/crepes. They are filling and protien packed - much better than the carb-loaded ones you find. Roast fish/chicken/beef with taco seasoning, shred, add avacado to these tortillas and enjoy...delish!

My favorite is My fish taco recipe!
Bake talapia: in oven sprinkled with chili powder, onion powder, lime juice, and a little sea salt (drizzle olive oil lightly)
My favorite mango salsa: chop up the fruit from 1 mango, a handful of fresh cilantro, 2 large tomatoes, a finely chopped slice of onion (or 2 scallions),( you can add a pepper of your choice if you want spicy) the Juice of 1 lime, and sea salt to taste
To assemble-
Your choice of tortilla based on diet needs, 1/2 filet of tilapia, some shredded romaine lettuce, and 2-3 tbsp of your fresh salsa.

I love to make enchiladas and they happen to actually be relatively healthy
Here my recipe:
You'll need
1 lb of 93% lean ground beef
8-12 yellow corn tortillas (these tend be smaller- great for smaller portions
1 cup of Monterrey Jack Cheese
1 Packet of McCormick Enchilada Sauce
1 8 oz can of tomato sauce
5-6 green onions sliced (if desired)
9x13" cake pan
Preheat oven to 350 degrees
Brown the beef and empty out the extra grease, thoroughly wet down your corn tortillas so they don't crack when you wrap them. Place a spoon full of beef onto tortilla, sprinkle a little bit of cheese inside, and wrap up, setting opening side down onto cake pan (or whatever you've got). After you're done putting all the enchiladas in the pan, spread prepared enchilada sauce all over the tortillas and sprinkle remaining cheese and green onions on the top. Bake for 15 minutes and Enjoy This is my favorite and it takes about a half hour to make 1 enchilada is figured out to be about 150 calories0 -

Hi there ! I´m mexican. And , well, sorry to tell you that fajitas and burritos and chili are not real mexican food.

Thats more like tex-mex food, but that is another whole thing. (and I like it too, by the way).
If you want a light and delicious food I could recommend you to google "ceviche de pescado" (fish ceviche, or shrimp) which is a mixture of your choice fish and shrimp with avocado, mayonaise, lemon, salt, pepper and other things, or a mexican shrimp coctail
Here is the "Aguachile de camaron" recipe here, which is really easy and really yummi. (and lots of protein and low calorie!)
You will need
1 fresh cucumber
sea salt
18 shrimp (big ones)
1 rosemary little branch (optional)
1 cherry tomato (optional)
8 pieces of REAL MEXICAN LEMON (this is the most important!) Its the small, very green , very acid lemon, used in key lime pie)
1/4 red onion
6 tostadas de maíz or a bag of totopos
2 serrano pepper
1 jalapeño pepper
You will need :
Blender
Preparation:
+ Put in the blender the juice of the lemons, the serrano peppers (remove seeds) , the jalapeño (remove seeds) , a bit of salt, and half the onion that you already cutted. Blend.
+ Peel the cucumber (with a potato peeler) , and put 1/4 of the cucumber in the blender too and blend.
+ + Clean and devain the shrimp. Give it a butterfly shape. Put them on a glass bowl.
+ Pour the mix you blended over the shrimp.
+ Cut the rest of the cucumber in slices or into small squares, as you wish. Also the other 1/8 of the onion :-) -- Put over shrimp.
+ Garnish with the cherry tomato and the rosemary branch. (optional)
+ Put sea salt to taste.
+ Leave it for five minutes and eat on tostadas or totopos. (and salsa if you want to!)

I grew up eating freshly made tortillas and authentic Mexican in near Chicago where it was REALLY authentic. This is the best homemade Mexican I have found. It's a little annoying to get the the recipe but I promise it is worth it. It's called chicken adobo and if you follow this link and click on the 4th picture I promise you will not be disappointed!

I do love my Mexican! Just ditch the chips (I doubt actual Mexicans use them anyway) make your own seasonings to cut down on the salt and leave out the cheese and sour cream and its all perfectly healthy!
Actually we do eat tortilla chips and call them " totopos ". We don't eat them regularly, but often at a more formal family dinner, with guacamole ( which is a special dish ) and on holidays. What we don't eat, is most the things mentioned in this thread, especially not all that melty cheese on everything. But here in Mexico City burritos are the rage now and I expect people to eat more Tex-Mex food soon.0 -
If anyone says anything about putting shredded cheddar cheese on mexican food.... I WILL END YOUR EXISTENCE.
No existences need to be ended, because no matter if it is Cheddar ( which is perfectly fine ) or Chihuahua cheese, we don't use the amounts that are used for Tex-Mex food. Mexican dishes, if requiring cheese, usually use fresh white cheese like Panela, Canasta or other non-melting cheeses. Even the traditional enchiladas have white cheese on them and a little bit of cream maybe.0 -

i'm a huge fan of mexican food. when i started on focusing on what i was eating I started amending my receipes of nacho mince.
It's gone from turkey mince, to now brown rice (give texture of mince), courgettes, mushrooms onions & peppers. natural herbs & seasonings, home made tomato sauce & baked tortillas - full flavour without the guilt.
shared with friends & they didn't even notice the difference.
