Just curious! I love hearing what other people are eating and getting ideas. I might eat some tilapia with roasted veggies.

    Split chicken breasts "roasted" in the slow cooker, stuffing, artichokes with mayonnaise. Should run about 550-700 calories, depending on how much stuffing I want. If I can restrain myself on the stuffing, though, I'll use the other calories for a glass of wine or maybe some ice cream for dessert.

    Yum, tilapia with roasted veggies sounds delicious.

    I just finished a bowl of lentils with onions, carrots, and chopped broccoli (with a little salt), with a tall mug of Green Mountain Dark Magic espresso (black). Everything tastes better with espresso....

    Leftovers. Between the two of us, we have a skimpy serving of spaghetti squash pad Thai, two or three servings of taco meat and refried beans and some curry lentils. Clearly not one of those nights where all the leftovers get thrown into one casserole.

    Tonight I am "splitting" a spinach-mushroom-feta fritatta with Toddler. Were Husband home, it likely would have been homemade personal pan pizza instead.

    Friday is usually homemade pizza night. Assuming the dough thaws out in time (forgot to take it out of the freezer before work, ooops), toppings this evening will be roasted red peppers, goat cheese, caramelized onion and I'll probably throw last nights leftover chicken breast on there as well. Oh and cheese can't forget the cheese. Can't wait, pizza night is my favorite!

    Pizza, unfortunately. And since I had a big breakfast with a friend, I skipped lunch and was starving at dinner :/ Let's just say I had a really bad eating day.
