This actually turned out to be a good rest day food with its very high fat content. I used the same process as making corned beef brisket from scratch. Then boiled for 3 hours in fresh water, then skinned, then boiled again for an hour or so in beer cut with water.

No one who tries it feels that way. It basically tastes like the best corned beef, ever. The texture is meaty and kind of melty. Looking forward to learning some other variations on tongue from different cultures.

I've only had tongue once, in Morocco. I did feel like I was french kissing a cow because of the texture.

I love cooking but I would draw the line at this tongue. It looks like it has literally been ripped from the mouth of a cow and served with a sprinkling of chives. Oh my Lord, I will never sleep again after looking upon that picture!!

Oh man. I just couldn't do it. I have a hard enough time cooking a whole chicken. That would send me over the edge.

Watch Heston blumenthal's YouTube video on roasting chicken. Problem solved, and you will not be able to believe how easy it is at first. Or how awesome your chicken will be.

Oh it is not the cooking part I have a problem with. It is the whole chicken and having to scoop out the innards

Good for you. I'm from Latin America and we eat tongue frequently. Your cooking technique sounds really good.

Ha Ha, I can certainly understand that, looking at the picture. If it was diced up or something where it didn't actually still look like a tongue, then maybe I would try it. And being from East Texas, I have eaten many things you wouldn't normally eat.
I'd also be afraid I might bite my OWN tongue by mistake! Ouch!

Lol haven't tried those yet but I will basically try anything.

Coming up next, I'll be harvesting, gutting, and cooking some snails.

A bulll's tongue is about as big as your forearm. I sliced it up and put the tip of it in the middle. My attempt at presentation. I call it "just the tip" when you have that tip in a sandwich.

I love beef tongue. It's especially good as a roast beef sandwich with a little bit of horseradish mayo! Your presentation looks yummy!
