I have been making a chicken veggie pilaf here lately that is super yummy

    1/2 cup of dry quinoa
1 cup of reduced sodium reduced fat chicken stock
1 cup of frozen mixed veggies (the 1 I use has green beans, carrots, corn, and peas in it)
    chicken breast

Add the quinoa, chicken stock, and frozen veggies in a saucepan. I also add galic and pepper to this. Bring to boil, cover and simmer about 10-15 minutes or unitl quinoa is cooked. Add chicken breast if you like to make a more rounded meal or just eat just the pilaf. Super easy and very filling. I am actually having it for lunch today but with no chicken just the pilaf.

    MMmmmmmm, Sounds yummy

OK you may want your quinoa a bit al dente like pasta. And so you should not mix it up with other stuff and cook longer than you should. It would become mush. Al dente is a lot tastier. So eat quinoa with your main dish such as chicken etc.

Basically for one serving, use 1/4 cup quinoa with 3/4 cup broth and bring to a boil. Lower heat and cover for 15 minutes, cut the heat and let sit for another 5. You get yourself the most delicious quinoa.

    Bump for later.
Great inquiry. I've been looking for ideas.
  • I make mine as a soup with 4 cups of chicken stock, 1/2 cup of quinoa (or more if you prefer it less soupy), one can of original rotel, sliced turkey sausage, chopped kale and then add some extra chipotle pepper seasoning...it's a new favorite!!

    Into the rice cooker put:

    1 cup Quinoa
2 cups water or chicken broth
2 TBSP reduced sodium soy sauce
    1 TBSP powdered ginger
    2 heaping tablespoons roasted garlic
a few 'shakes" of red chili flakes

Cover, turn it on and wait until it's done like you would race. (20-25 minutes or so) Top with a little sesame seed or chopped green onion if you want.

    quinoa
    dark red kidney beans
    turkey kilbasa
    creole seasoning

cook quinoa according to directions. While it's cooking add in 1/2-1 teaspoon of creole seasoning (whatever your preference). Heat kidney beans. Heat kilbasa. Combine.

I'm another one who cooks up a batch and puts it in the fridge. I use it in place of any kind of rice and most pasta dishes. It's a good filler food. I even took a pasta salad recipe and substituted the pasta with quinoa.

I'm eating a Quinoa salad as I am typing!

    1/4 cup Qunioa
    1/2 cup Water
Bring Water to a boil, add Quinoa. Lower heat and cook until water is absorbed(About 6 minutes)

In a bowl combine your favourite veggies.
I like to keep a Broccoli slaw on hand and I toss in Tomatoes, Snap peas, cucumber and Onion.

Dressing: Mix together lemon juice, some garlic, oregano and a little bit of olive oil(1/2 a teaspoon) and stir together.

In a bowl mix Quinoa, Veggies and stir in dressing. Voila! Delicious!

You'll be prepped, cooked and eating in less than 10 minutes!

I make what I call a Greek Quinoa. I cook it as normal, although I do use broth instead of water to help flavor. Then chop roasted red peppers, olives, Mediterranean seasoning, and a bit of Feta toss it all together and its a yummy side warm, or a lovely lunch cold. :)
