    So over the weekend I had been turned on to sweet potatoes, and I'm wondering why the heck I haven't tried them before!

    I'm wondering what are some good ways to prepare them other than making a dessert out of them (pies, candied Thanksgiving style, etc).

    How should they be seasoned? Salty/sweet? Garlic???

    Don't just pull recipes off the internet--I want to know what YOU do with them!

    One of my favorite ways to eat them is to steam them (peel and all) in a steamer pot until they are fork tender, and then eat them like a baked potato (the skin easily separates from the flesh when you steam it). Just split it open and top with a generous dollop of full-fat balkan style yogurt (tastes just like sour cream) and put a sprinkle of cinnamon on top. Mmmmm. (I'll probably make it for dinner tonight or tomorrow night!) :smile:

    My favorite way is to cut them into 1 inch chunks, toss with olive oil, season with salt and pepper and roast. Once they're tender, drizzle them with about a tablespoon of balsamic vinegar. SO yummy! I also make sweet potato fries (tossed in olive oil and baked), sweet potato patties and black bean and sweet potato soup. Of course, you can just bake them and season to taste. :smile:

    This is a tried and true fave in my household:

    Oven-Roasted Sweet Potatoes and Onions
    Yield: 6 servings (serving size: 1 cup)

    Ingredients

    4 medium peeled sweet potatoes, cut into 2-inch pieces (about 2 1/4 pounds)
    2 medium Oso Sweet or other sweet onions, cut into 1-inch pieces (about 1 pound)
    2 tablespoons extra-virgin olive oil
    3/4 teaspoon garlic-pepper blend (such as McCormick)
    1/2 teaspoon salt

    Preparation

    Preheat oven to 425°.

    Combine all ingredients in a 13 x 9-inch baking dish, tossing to coat.

    Bake at 425° for 35 minutes or until tender, stirring occasionally.

    My simple homemade Sweet Potato Fries:

    Cut sweet potato into fries and toss in a little melted coconut oil. Sprinkle with Kosher (or Sea) Salt and paprika. Bake in the oven at 400-420 for 30-40 minutes.

    Cook & mash, add a little bit of butter and lots of cinnamon, dash of sugar. Yum, yum, yum and still great for you!

    my favorite is mashed with almond milk (I'm lactose intolerant) to make them creamy. Then I top with bacon or pecans, both are delicious.

    add:
    sour cream (greek yogurt)
    hot sauce (salsa / pico de gallo)
    chicken or beef or turkey

    This is awesome, but not the most diet friendly!!
    Chop sweet potato into fries, wedges, whatever. Soak them for about 15-20 minutes in cold water. Dump them on something to dry them, paper towel tea towel whatever. Line a cookie sheet with parchment paper, put all your fries( now dry) into a bag or bowl and coat them with tapioca starch( could probably use any number of other starchs). Spread them evenly over cookie sheet or two depending on how much your making. Spray or drizzle with oil( I use canola or olive) .Make sure they are well spaced. Now herb and spice them up!!! I like to use tons of garlic powder, basil, parsley and black pepper. Really whatever you like will work. I bake at about 425, you know your oven best ;) Watch then closely, give them a flip when you see they are getting browned. It's a little extra effort, but so much yummier then prepackaged.. If you have lots of calories to gobble up, mix your fav bbq sauce two parts to one part maple syrup...heaven. I use Diana's Honey Garlic and maple syrup. Enjoy!!!!

    I love steaming them in the microwave. Stab them a couple of times though or cook them in the oven like a baked potato. Sweet ones cook faster though. Then I just fork them up a little, maybe spray some spray butter on them with a little salt. For lunch, I often steam some asparagus as well and top the sweet potato with the asparagus. A very clean, quick, and filling meal!!!
  • I have tried Sweet Potato Pancakes [+Cinnamon], Mashed Sweet Potatoes, Baked Sweet Potato Fries [Thick-Cut], and Simple, Baked Sweet Potatoes. One comment mentioned trying them Scalloped, and that sounds Delicious! My favorite spice combinations would have to be.. Cinnamon + Stevia for a sweeter taste, and Spicy Chipotle Seasonings if you're craving something salty. Get creative! They adapt well to most any type of flavor, and the fries are wonderful when dipped in BBQ sauce !

    I do a LOT with them - but I like to dry roast mine (baked without any oil/fats) and pop them in the fridge and have them available for snacking.

    Baked sweet potato with spoonful of plain greek yoghurt and sprinkle of pepper. It's the perfect combination of sweet (potato) and tart (yoghurt).

    Sure - you can definitely put them in the microwave. anywhere from 4 - 8 minutes

    When I want something filling and evil, I oven-roast them w/garlic salt after tossing with a little olive oil. Very high in carbs but significant food value. Also, incredibly flavorful and delicious!

    I microwave mine for about 5 minutes (depends on the size) and just eat it. I don't put anything on them. I love the natural flavor.
    This is what I usually do as well. Or top them with beans and salsa.

    I cut mine into slices and place on a aluminum foil covered baking tray
    heat the over to 350 degrees
    lightly cover each slice with extra virgin coconut oil
    sprinkly on some ground cinnamon
    let bake for an hour

    I wrap mine in aluminum foil, stab it a few times with a fork, and bake it at 350° for about an hour (or more if I forget about it). It turns really soft and the natural sugar caramelizes! I usually add salt, pepper, and a small sprinkle of brown sugar (both sweet and savory :)), and if it's not soft enough in the middle then a very small amount of butter (like less than 1/4 tbsp)

    I stab them a couple of times and toss in the microwave for 6 or seven minutes. While they cook, dump a can of rotel tomatoes and a can of black beans in pot and cook on medium. I spice them with chipotle, cumin, salt and coriander. Then cook up a couple of pieces of turkey bacon. Slice open your potato and top with bean mix, bacon and I usually add some cheese. 15 minutes and dinner's on. :)

    Cubed and roasted. Delicious. Even better with some minced onion and other root veggies.

    Or sliced and baked like chips...but that's tricky. You need to get the slices uniform and there's about a 45 second timeframe where they're just right and not under- or overcooked.



    (Oh, and in because I have fond memories of an infamous sweet pertaterz thread.)
