    Greek Style Quinoa - it's my absolutely favorite. I found it 2 or 3 years ago... possibly on MFP. I can't remember. Anyway, I know I've posted it before, but here it is. So easy and delicious. Enjoy!

    Greek Style Quinoa

    Ingredients

    1 cup quinoa
    2 cups water
    3 tbsp. olive oil
    ¾ cup fresh lemon juice
    1 tsp. dried oregano
    1 clove garlic, minced or pressed in a garlic press
    ¼ cup kalamata olives
    1 bunch scallions, chopped
    1 pint grape tomatoes, halved
    7 ounces sheep's milk feta cheese, cubed
    ¼ cup diced red onion
    Salt and pepper to taste

    Directions

    Place quinoa in a strainer and rinse under cold running water. Add water and quinoa to a medium saucepan. Bring to a boil and reduce to a simmer. Cook 15 minutes until quinoa is almost translucent. (I don't cook my quinoa like this. I just bring the water to a boil then let the quinoa simmer for 12 minutes... but do it however you prefer)

    In a small bowl, combine olive oil, lemon juice, oregano, and garlic. Toss with quinoa. Place in freezer for 15 minutes to chill, or put in fridge to chill if you are not eating it right away.

    Add olives, scallions, grape tomatoes, feta cheese, and red onion; gently mix ingredients. Season with salt and pepper and serve.

    Tip
    Feta cheese may be too salty for some. To lower the sodium count, soak it in water overnight.

    IT makes alot per that 1/4 cup cooked and mixed with stuff you have more servings so the calories are not that bad.

    Oh boy, I have SOOOO many recipes for this! I LOVE QUINOA!!!! I will make Taboulli (not sure if that is spelled right!) with it , I do half cracked wheat half quinoa. I also make Quinoa Cookies, YUM.

    Can you post your taboulli recipe? YUM!

    Lovey...(through clenched teeth) Pass the Quinoa, would you? QUINOa makes me think of thurston howel the third... but I recently cooked with some.. liked it well enough.. I was doing a chicken soupy thing with fresh zucchini and cherry tomatoes and peppers from back yard, plus onion, soup base and yes, quinoa.. very very tasty..

    Homemade Quinoa Granola

    1 cup canola oil
    1 cup honey
    1/4 cup peanutbutter
    1/4 cup corn syrup

    8 cups rolled oats
    1 cup wheat germ
    1 cup pecans, chopped
    1 cup cranraisins, chopped
    1/2 cup flax seed
    2 cups quinoa, soaked in 1 1/2 cups of water for 2 hours

    Directions - melt first four ingredients in a saucepan, stir to combine, pour over remaining ingredients and mix to coat. Spread mixture on two large cookie sheets and bake at 300 degrees for one hour. Stir granola every 20 minutes and switch top cookie sheet with bottom half way through.

    Granola Cookies
    Recipe is not mine, but comes from someone on the internet. Unfortunately, I’m not sure who…but I did change it a wee bit.
    1 ¼ cup flour
    ½ tsp baking soda
    ¼ tsp salt
    ½ cup butter
    ½ cup white sugar
    ½ cup brown sugar
    1 tsp vanilla
    1 egg
    4 tbsp milk
    2 cups granola
    1 cup dried apricots, chopped
    1 cup mini chocolate chips (optional)
    Whisk together the flour, baking soda, and salt.
    In a separate bowl, beat together the butter, sigars, and vanilla with an electric beater until it is fluffy.
    Beat in the egg and milk.
    Add in the flour and mix in thoroughly.
    Stir in the granola and any other extras that you’d like.*
    Roll the cookies into little balls about 1 tablespoon or so big or drop the cookies onto a baking sheet.
    Bake at 350 degrees for 13 minutes or until golden brown. Softer when you bake less, crunchier when you bake more.
