    So my trainer gave me a recipe for protein pancakes for those mornings when eggs just don't sound good. i made her recipe and it was like eating cardboard. I could not drink enough water to wash them down!!!

    So I put on my creative caterer hat and started playing with the recipe. After a few unsuccessful attempts, I made some that my SO thought were amazing!!!!

    Pumpkin Protein Pancakes

    Ingredients
    1 Egg White
    1/4 cup Libby's - 100% Pure Pumpkin
    1 Scoop Vanilla Protein Powder*
    0.5 Tbsp Bob's Red Mill - Ground Golden Flax Seed
    1 Tbls Unsweetened Vanilla Almond milk,
    0.5 teas Ground Saigon Cinnamon

    Calories Carbs Fat Protein Sugar Sodium
    200 9 5 31 4 157

    *I used Costco - Cytosport 100% Whey Concentrated and Isolated Whey Protein Vanilla - Vanilla Whey Protein Mix, 36 g rounded scoop

    I topped them with 0.25 cup of Grandma Hoerner's - Original Big Slice Apple Sauce All Natural for an extra 25 Calories.

    These were amazing and soooooo filling!!!!

    You could probably add some walnuts for a little more protein (not that it's needed...31g, HOLY CRAP!), and some omega 3's. Plus, walnuts and pumpkin anything is yummy.

    You could probably use coconut flour or ground chia seeds.
