    Skinnytaste.com has some recipes using cucumbers. They're all delish! Especially the salad with avocado, corn, tomatoes, and cucumber :-)

    Spicy cold cucumber soup

    de-seed cucumber
    cut cucumber into little bigger than matchstick size
    crush 1 garlic (2 if you really like garlic)
    sesame oil, just enough to coat lightly
    sesame seeds
    crushed red peppers - use a good hefty tablespoon
    rice vinegar - couple tablespoons
    mix well, let it hang for a few minutes - if you really need sugar, add a little at this point

    add water, mix well - I eat with a little rice

    I agree with those that said a tomato cucumber salad hits the spot. I use olive oil, apple cider vinegar, some dill, s&p and good to go. mmmmmmmm.

    Several easy ways: check at your local grocery store, see if they carry Ball Brand ( like the jars) bread and butter pickle mix. You take the packet, add vinegar and sugar, bring to boil, pour over cut cucumbers ( spears or slices), pack into jars seal with lids and rings: must be constantly refrigerated, they have not been hot water boiled to seal for long term shelf life.

    OR my favorite recipe is: (Less sugar and salt than pre packaged mix)

    8 cucumbers sliced, do not peel
    1 cup sliced onions
    1 1/2 tsp salt
    Mix and let stand in ceramic bowl for three hours to draw their own juice.

    Take large, really large glass jar for brine:
    1 cup apple cider vinegar
    2 cups sugar
    1/2 tsp tumeric
    1/4 tsp powdered Alum
    1/2 tsp celery seed
    Stir brine well, pack cucumbers and onions into large jar. Seal with lid and refrigerate. Ready to eat after 3 days (stir daily for these three days). Can store in frig up to one year.

    I like to slice them in little rounds and make tiny chicken salad sammies out of them. Great little finger food and no carbs!

    A cucumber and tomato salad. Tossed lightly with a vinaigrette and a touch of Feta cheese and some sliced red onion. DELICIOUS!!!

    Or you can juice them. Cucumber juice is very good for you. Add a little lime juice and sea salt.

    I wash and cut my fresh tomatoes into chunks, place them in freezer bags and freeze. I then add them to soup all during the winter. Brings in that fresh summer flavor: Yummm!

    I also just wash and slice my green peppers, story in freezer in same way. Makes onion, pepper and mushroom dishes very flavorful in mid winter.

    I usually very very fine slice 'em with a peeler , mix them with fine chopped mint , diced tomatoes and fine diced red onion (pour some boiling water followed by cold water over the onions to get rid of the harshness)

    For the dressing mix 1 tablespoon olive oil , 1 tablespoon rice vinegar , a dash of Worcestershire sauce, a teaspoon of honey, salt, pepper and a tablespoon of gin...it's a bit like eating a bloody mary..

    Cucumber mint water!
    Slice up the cucumbers and throw in some mint leaves with water in the biggest jar you own and refrigerate! You'll have cold cucumber mint flavoured water to drink all day long!

    Hollow out the seeds. Add canned tuna and red peppers. I love it.

    Hummus is also great with cucumbers.
