AMAZING Chicken Spring Rolls with Spicy Mayo

This originally was made with lean beef and regular mayo. I am not a huge fan of beef and figured it might be good with chicken anyway! ENJOY!!! It is so good!!!
3⁄4 cup light Hellmans mayonnaise
3 tablespoons soy sauce
1 tablespoon sriracha
1 (12-ounce) bag bean sprouts 3⁄4 cup chopped fresh cilantro
6 scallions, white parts minced, green parts sliced thin
1 tablespoon vegetable oil
1 pound lean ground chicken
12 (9-inch) rice paper wrappers
1. Combine mayonnaise, 2 teaspoons soy sauce, and sriracha in small bowl. In separate large bowl, combine sprouts, cilantro, and scallion greens.
2. Heat oil in large skillet over medium-high heat until just smoking. Add beef and remaining soy sauce and cook until no longer pink, about 5 minutes. Stir in scallion whites and ginger and cook until fragrant, about 1 minute. Transfer beef to bowl with sprouts mixture. Add cup mayonnaise-soy mixture and toss to combine.
3. Spread clean, damp kitchen towel on work surface. Soak 4 wrappers in bowl of warm water until just pliable, about 10 seconds, then spread out on towel. Place cup filling on each wrapper, leaving 2-inch border at bottom. Fold in sides and roll up tightly. Repeat with remaining wrappers and filling. Serve, passing remaining mayonnaise- soy mixture at table.

Noticed that you said tablespoons for soy sauce but in the sauce mix you said teaspoons, was that a typo? Also how much mayo do you put because you said put all the mayo in the sauce. Just want to make sure I make everything correct.

how much ginger? does it need to be fresh? and can you bake these to give them a crispy exterior?0

Sorry about that, I put a 1tbsp of ginger in. The purpose of these rolls, Summer rolls, is to have it cold. If you wanted to bake or fry, I would use a wonton or spring roll wrapper not a rice paper wrapper.
This is for 1 serving but I can assure you it is unbelievably filling! And, the calories are low enough for you to have more than 1!0 -
