    Sooo trying some of the recipes here! I usually just eat as a substitute for rice or toss it in whatever salad I'm eating.

    Has anyone tried the crispy quinoa they sell in bulk at Whole Foods? Thats the only place ive ever seen it. Its SO GOOD. really crispy, kinda like rice crispies but crispier and more substantial, with much better flavor. Ive been having it for breakfast with vanilla coconut milk, sliced banana, and a couple teaspoons coconut sugar. Its great :)

    I bought the flakes you make hot cereal out of, but havent tried it yet-i tasted a couple of the flakes and thought it had a funny taste to it, nothing like the rich nutty taste of quinoa...

    Eta- the crispy quinoa makes a great coating for fish and chicken, too, just season the quinoa with salt, pepper, whatever other seasonings you want (beercan chicken is good), then, dip the meat in egg white and roll in the quinoa/seasoning mix, and fry in a pan with some cooking spray.     Quinoa Fresh Tuna Salad

    2 cup prepared to package specs quinoa
    2 cans of albacore white tuna drained
    1 lg red bell pepper chopped
    1/2 cup chopped parsley
    2 med-lg tomatoes chopped
    1 cup chopped nuts (We like walnuts or pine nuts)
    1 lemon juiced
    3 tbsp EVOO
    Salt and pepper to taste

    Combine all fresh veggies, tuna, oil and lemon juice.

    Add Quinoa and mix, serve warm or cold

    I like to add garlic powder and cayenne pepper to give it a kick.

    Feel free to spice it as you like!

    Garlic Quinoa with Parmesan Cheese

    Ingredients:

    1 tbsp butter
    1 small yellow onion, diced small
    3-4 cloves garlic, minced
    2 cups vegetable broth
    1 cup uncooked quinoa
    1/4 tsp salt, or to taste
    1/4 cup Parmesan cheese

    Preparation:
    In a medium sized pan, sautee the onion and garlic in butter or olive oil over medium-high heat for 3-5 minutes, until onions are just soft. Reduce heat to medium low.

    Add the vegetable broth and quinoa. Cover, and allow to simmer until liquid is mostly absorbed and quinoa is cooked, about fifteen minutes.

    Remove from heat, and gently mix quinoa to distribute any excess moisture. Season with salt to taste, and top with Parmesan cheese, or, for a vegan version, mix in nutritional yeast instead of the cheese.

    Makes 3 servings of vegetarian quinoa.

    Sweet Potato Quinoa Protein Pancakes

    1/2 cup cooked Quinoa
    2- 3 egg whites
    1 cup blended rolled oats
    3 tsp baking powder
    30g Protein Powder (your choice of flavour)
    4 pck Stevia
    1/2 cup mashed sweet potatoes

    1.) Mix all dry ingredients- blended rolled oats, baking powder, stevia & protein powder.
    2.) Once mixed; add beaten egg whites, cooked quinoa & mashed sweet potatoes into the mixture.
    3.) Mix until desired consistency is reached.
    4.) Cook with extra virgin olive oil then serve with cottage cheese sprinkled with cinnamon!

    My favorite quinoa salad:

    Cook 1 cup dry quinoa

    Then add:

    -1 carton grape tomatoes (slice in half if they are big)
    -1 cup corn (i use frozen and then eat the salad the next day, but fresh works too!)
    -1 can black beans, rinsed
    -small handful cilantro, chopped
    -several green onions, chopped
    -juice of one lemon
    -juice of one lime
    -drizzle of olive oil

    Mix it all up, then add avocado on top!

    Seriously, I can't get enough of this recipe... it is SO GOOD.

    ^^That is my all time FAVORITE quinoa recipe! Seriously delicious! The only thing I do differently is roast or grill the corn and add cumin. I also add red bell peppers if I have them.

    Tonight I made Quinoa Caprese Salad and it was really tasty!

    Red Quinoa Caprese Salad
    Ingredients
    -1/2C quinoa
    -8 oz fresh mozerella (I use the little cherry size balls)
    -1 carton grape tomatoes, halved
    -fresh basil (I use a ton because I love it and it's taking over my garden)
    -2T olive oil
    1-2 T balsamic vinegar
    -salt & pepper

    Method
    1. In a medium sized pan, bring 1C water and 1/2C quinoa to a rolling boil. Reduce heat and simmer on LOW until all of the water is absorbed. This should take anywhere between 10 and 15 minutes. *Cooking your quinoa on low is extremely important. If you let it simmer on a hotter flame, the water will absorb too quickly and the quinoa will turn out hard!

    2. Cool the cooked quinoa in the refrigerator for at least an hour before preparing the salad.

    3. To prepare the salad, slice grape tomatoes in half [hot dog way] and cut the block of fresh mozzarella into bite size pieces. Mix together. Then, add the chopped basil and cooked quinoa and give the salad a toss. Next, drizzle on the olive oil and season with a little salt/pepper (to taste). Give your salad a final toss and serve cool or at room temperature.

    Turkey Quinoa Meatloaf

    Ingredients

    1/4 cup quinoa
    1/2 cup water
    1 teaspoon olive oil
    1 small onion, chopped
    1 large clove garlic, chopped
    1 (20 ounce) package ground turkey (if you can get dark & white meat ground that is best!)
    1 tablespoon tomato paste
    1 tablespoon hot pepper sauce
    2 tablespoons Worcestershire sauce
    1 egg
    1 1/2 teaspoons salt
    1 teaspoon ground black pepper
    2 tablespoons brown sugar
    2 teaspoons Worcestershire sauce
    1 teaspoon water

    Directions

    Bring the quinoa and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the quinoa is tender, and the water has been absorbed, about 15 to 20 minutes. Set aside to cool.
    Preheat an oven to 350 degrees F (175 degrees C).
    Heat the olive oil in a skillet over medium heat. Stir in the onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Add the garlic and cook for another minute; remove from heat to cool.
    Stir the turkey, cooked quinoa, onions, tomato paste, hot sauce, 2 tablespoons Worcestershire, egg, salt, and pepper in a large bowl until well combined. The mixture will be very moist. Shape into a loaf on a foil lined baking sheet. Combine the brown sugar, 2 teaspoons Worcestershire, and 1 teaspoon water in a small bowl. Rub the paste over the top of the meatloaf.
    Bake in the preheated oven until no longer pink in the center, about 50 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Let the meatloaf cool for 10 minutes before slicing and serving.

  • I love stuffed peppers, this is one of my favorite Quinoa recipes

    Quinoa-stuffed peppers

    Ingredients
    1⁄2 cup quinoa
    4 sweet green peppers
    1 tsp canola or olive oil
    1 medium onion, chopped
    8 mushrooms, quartered
    1 cup cooked or frozen corn kernels
    2 tbsp minced fresh coriander (cilantro) or parsley
    1 tbsp sodium-reduced soy sauce
    2 tsp sesame oil
    2 tsp chopped fresh garlic
    Pinch red pepper flakes
    1⁄4 cup bread crumbs
    8 tbsp shredded part-skim mozzarella cheese
    1/2 cup chicken diced

    Directions

    Rinse quinoa under cold water; drain.
    In saucepan, bring 250 mL/1 cup water to boil; stir in quinoa.
    Reduce heat, cover and simmer for 15 minutes or until water is absorbed and quinoa is translucent.
    Cook chicken
    Cut off 1 cm (1⁄2 inch) from tops of green peppers; remove seeds.
    Bake Peppers for 5 minutes
    In skillet, heat oil over medium heat; cook onion until tender.
    Stir in chicken, mushrooms, quinoa, corn, half the coriander, soy sauce, sesame oil, garlic and red pepper
    flakes; stuff into peppers.
    Mix bread crumbs and cheese. Sprinkle peppers with bread crumb mixture and remaining coriander.
    Bake in greased 8-inch (2 L) square baking dish in 180°C (350°F) oven for 30 minutes or until heated
