Tzaziki sauce for chicken, pork, beef, or lamb!!
Peeled, seeded and finely diced cucumber.
Mix in a cup of Greek yogurt, 1/2 TSP dill, a TSP of lemon juice, and a little black pepper.
Put in the fridge for an hour.
It's awesome on sandwiches too.0 -
Homemade tzatziki sauce:
Diced cukes
Minced onions
Minced/pressed garlic
Yogurt
The consistency should be like thick thousand island - a thick liquid that still pours with lots of pieces in it. Put lots of garlic in, serve with a meatloaf-esque mixture of ground meat - lamb if you're being at all authentic, beef works fine. Don't put ketchup in the meat!!!0 -
Do you have a juicer? Cucumbers are great vegetables for juicing! You can also use them in green smoothies. Also, I've had a certain kind of salad at Japanese restaurants that involve cucumber, seaweed, and sesame oil0

Diced and put in whole wheat pearl couscous salad (olive oil, vinegar, tomato, onion, sweet pepper). Awesome.
Also, use instead of crackers with cheeses, hummas, etc.0 -
I put a wedge of Laughing Cow cheese spread on a tortilla and put diced cucumber on that - added some chicken sometimes, sometimes olive and/or sun dried tomatoes. But always the cucumbers when the garden was in full force.0

They are great in chinese stir frys. All you do is quarter them, then slice them across very thickly, scrape off the seeds and watery bits. They will absorb flavour and will stand a surprising amount of cooking time - I add them in for about the last 5 mins with whatever else I'm cooking0

Cucumber Fun Fact:
They suffer from First Fruit Inhibition! The first fruit will be much larger and take away from the others. To get a mass of large cucumbers you need to pick the largest one as they grow, therefore the others will be able to grow big and strong as well!!!
