    Excuse me being a twit but... Do you whiz the whole orange? No removal of skin or anything?

    Yep! The boiling reduces the bitter taste of the orange and being so soft after cooking, the whole lot just blends really smoothly.

    Ok, I made these tonight for a party I'm having and we're all eating pretty healthy. I made them into mini muffins. They're ok, good flavor but a little dry from lack of fat. I think putting in a bit of oil would make them less dry, and/or some applesauce or something. Great flavor though! My orange was just medium sized and the dough was dry, so I added some OJ. I think a weight measurement on the orange would help too :)
