No Rice Risotto

Hello All,

So I was watching Dr Oz and I saw this segment on gluten free easy meals, one of which was a rice free Risotto. I tried it and LOVE IT.

here is the recipe,

1 cup quick oats
2 cups chicken broth
2 tbs cream cheese
1 cup frozen peas (or any veggies you want)
pepper and salt to taste (and any other spices you want)

Combine the oats and broth and microwave for 2 minutes
add the cream cheese and peas and microwave for another 2 minutes
mix and serve

makes 2-4 portions depending on how large/small you want your portions

    That looks great! I acutally do risotto with Barley... I just use the same amount as I would rice and do the same exact thing and it comes out wonderful and OH SO Filling! If you want the recipe let me know, but I will def. write down yours! Thanks for sharing!
