Just made my first spaghetti squash last night... it was GREAT, and my husband liked it too I love that this dish is basically all vegetables with a little cheese on top, but is still so filling and satisfying.
1 zucchini, 1 onion, 1 red bell pepper, and some garlic sauteed in a pan (I added some basil, oregano, salt, and pepper)
Throw it in a 9x11 with the insides of a cooked spaghetti squash
Add some marinara sauce (about 1.5 cups). Stir.
Bake at 350 for 25 minutes.
Pull it out and throw some shredded mozzarella on top.
Bake again until cheese is melty and delicious looking.
About to go have leftovers for lunch, yum!0 -
Haven't made this particular recipe yet, but it's on my list. The post also has great step-by-step photos on how to roast one.

Does anyone know if you can freeze spaghetti squash?0

Question?? If I cook a spaghetti squash and shred it, can I separate it into portions then bag it /freeze for later? I am the only one in the house that likes this squash, but 1 squash seems to make enough for 3 meals for me.
Thanks....Teri
I did read on here that you can bag it up and freeze it.0 -
