    We love cauliflower mashed potatoes. I usually make mine with some fresh minced garlic and some shredded parmesan cheese. Made some tonight and added some chive and onion cream cheese and a teaspoon of fat free sour cream. You can do pretty much anything to them and they are tasty. Its the only "mashed potatoes" my 11 year old will eat, she even begs her grandma to make them like her mommy :-)

    Been making this for 7+ yrs only this is my variation and I use a food processor and my family thinks it's potatoes when I give them gravy.

    I don't need the gravy it's so good!
    Oh and I use it for shephards pie too!

    Philadelphia Cream Cheese - Cream Cheese 1/3 Less Fat (8oz), 2 tbsp 70
    Spices - Pepper, black, 1 tsp 5
    Spices - Garlic powder, 1 tsp 9
    4 servings
    Total: 184
    per Serving: 46

    I use mashed cauliflower to make shepherd's pie instead of potatoes. It took the kids 13 years to figure it out. :D

    I tried this this week!!! It was SO good!

  • Thank-you so much!!! I made these for dinner tonight and they were awesome!!! I steamed my califlower. I chopped up my onions and used a few fresh galic cloves and stir-fried them with just a small spray of olive oil. I added it all to my mixing bowl and blended it until creamy and added a couple tablesppons of fresh parsley!!! My husband told me next time I need to double the recipe!!! Was a huge hit, even with the kids!!!

    I'm so glad you liked the cauliflower mash!

    Bump dies two things:

    1) bumps the post to the top of the MFP heap so others will see it

    2) Saves it on your top 25 list so you can find it again later

    You don't have to say bump. You could just leave a period-- or anything else-- and it would do the same thing.

    Most people use bump though.
  • Lots of folks have their own version of this tasty dish but all the ones I've seen use sour cream or butter or some other higher calorie ingredient to get the creaminess needed to make it yummy.

    Here is how I make it (it's a favorite in our household):

    1) Boil a whole head of cauliflower together with 1/2 a chopped onion until the cauliflower is VERY soft.

    2) Drain thoroughly and mash with the back of a tablespoon until "chunky-smooth."

    3) Add any of the following (choose one-- each works well): 1/2 can of Campbell's Healthy Request Condensed Cream of Mushroom Soup OR 1/2 can of Campbell's Condensed Cream of Celery Soup OR 3/4 cup of plain yogurt. Mix well with your trusty tablespoon.

    4) Heat in microwave until piping hot.

    5) Season to taste. I use "butter buds," garlic powder, salt/pepper, oregano, basil-- sometimes even chili powder. Use this opportunity to calm any craving you've got (salt, spicy, etc.) by adding it to the final dish.

    It serves 4 and is only 65 calories per serving.

    If you're starving and choose to eat 2 servings yourself I promise that you will be so stuffed you won't snack until your next meal.
