    Southwestern Spaghetti Squash

    Ingredients
    1 spaghetti squash ( 3 pounds)
    1 (14 ounce) cans Mexican-style tomatoes, undrained
    1 (14 ounce) cans black beans, drained and rinsed
    3/4 cup monterey jack cheese, divided
    1/4 cup cilantro, finely chopped
    1 teaspoon ground cumin
    1/4 teaspoon garlic salt
    1/4 teaspoon black pepper

    Directions
    Preheat oven to 350°F.
    Cut squash in half lengthwise.
    Remove and discard seeds.
    Place squash, cut side down, in greased baking pan.
    Bake 45 minutes to 1 hour or until just tender.
    Using fork, remove spaghetti-like strands from hot squash and place strands in large bowl.
    Add tomatoes with juice, beans, 1/2 cup cheese, cilantro, cumin, garlic salt and pepper; toss well.
    Spray 1 1/2 quart casserole with nonstick cooking spray.
    Spoon mixture into casserole.
    Sprinkle with remaining 1/4 cup cheese.
    Bake uncovered, 30 to 35 minutes or until heated through.
    Serve immediately

    Spaghetti Squash with sausage
    Ingredients
    2 lbs spaghetti squash ( One Large)
    1/4 teaspoon garlic powder olive oil
    4 Italian sausages, cooked and crumbled (I used turkey sausage)
    1/4 cup milk
    1/4 cup grated parmesan cheese
    1/2 cup grated cheddar cheese fresh ground black pepper salt

    Directions
    Cut the squash in half and carefully remove the seeds.
    Be sure to cut around the edge so you don't cut into the squash itself.
    Turn halves upside down in a baking pan.
    Bake at 375-degrees for approx 45 minutes, or until the inside is soft.
    Let cool and carefully remove inside of squash with fork or spoon.
    It will look a lot like cooked spaghetti and come out in strands.
    Heat some olive oil in a skillet.
    Add the spaghetti squash strands, garlic and crumbled sausage.
    Cook on med until for approx 5 minutes.
    Add milk and cook until heated through and liquid is absorbed.
    Transfer to a warm bowl and toss with cheeses until mixed.
    Top with salt and pepper to taste.

    I added a can of italian diced tomatoes. Delicious!

    I gotta try this. I've never made anything with spaghetti squash.

    ^^^ I'm with her! I'm totally intrigued by all of this.... Sounds tasty and I kind've can't believe I've never TRIED it before!

    I'm sure this was added already, but just in case. Hollow it out, add some jarred sauce and mozzerella into the cavity then cook in the oven (for about an hour)! You can eat the entire half for hardly any calories. It's a great way to get my baked macaroni fix.

    I need to try some of the above recipes! They sound great.

    Bump...I love spaghetti squash, but I never know what to do with it outside of just eating it with salt & pepper! Now I have a ton of ideas :)

    I just made "Squash 'n Cheese" last night, substituting spaghetti squash for macaroni but keeping the rest of the recipe the same. Delicious!

    Made this last night: I have a big family so don't mind the big numbers.

    11 servings( 1cup each)

    11 cups cooked spaghetti squash(I boil mine)
    11 2oz servings of chicken(called for grilled but it's cold out so I boiled)

    I sauted garlic in 3T butter(out of olive oil) then added squash and continuted to saute
    added 1.5 cups of frozen cut brocoli saute for 5-7 min.
    added 2 cups frozen peas saute for 5 minutes add cooked chicken at this time as well
    added 1 container philadelphia italian herb and cheese cooking cream(less fat kind)

    cooked until I was happy with consistency. added some pepper and voila.

    I was so surprised when this equaled 163 calories per serving. I ended up having a very low day yesterday on accident because of it. Next time I'll serve something with it..lol. Anyway all family members enjoyed it from the 20month old to the 36yr old.

    We love spaghetti squash and will try mixing just about anything with it. The other night I threw chicken, a piece of bacon, basil and minced garlic in a pan and cooked it and then mixed that in with the spaghetti squash (cooked in the microwave), chopped tomatoes and parmesan cheese, delish.
