    Crock Pot Chicken Soup
    Nutrition Info
    • Calories: 263.8
    • Fat: 2.9g
    • Carbohydrates: 13.6g
    • Protein: 43.3g
    Ingredients
    3 Chicken Breast
    1 Box of Swason Chicken Broth (99%fat free)
    3 Broccoli Spears
    1 Cup Brown Rice
    Basil
    Garlic Powder
    Black Pepper
    Oregano

    Directions
    Cut 3 breats into cube sizes (or your preference)
    Throw the chicken into the pot
    Pour the container of chicken broth into the crock pot
    Pour Rice
    Cut up broccoli spears and toss them in
    Add spices according to your taste

    Number of Servings: 4
    Is the rice precooked or raw when added? Wondering if that wouldn't absorb too much broth if raw?

    Here's one my husband makes. Based on the Sacred Heart Soup diet...but it's VERY tasty, makes a ton, and very low in calories! You can add/subtract any veggies you want..

    Sacred Heart Beef Vegetable
    Soup (Slightly Modified)

    Ingredients:

    • 1 Box of beef Swanson Stock
    • 3 Tablespoon Beef soup base (Heaped)
    • 1 Packet KNORR Veggie soup/Dip packet (4 cups Water as per its instructions)
    • 1Lb chopped carrots
    • 2 Medium (1 Large) Onion Chopped
    • 2 Cups of Celery Chopped
    • 8 oz slice mushroom
    • 2 cans Stewed Tomatoes or Diced
    • Bag of Frozen Green Beans 8 oz.


    PREPERATION:

    In a 6 qt. slow cooker, pour the beef stock, add the beef base and KNORR veggie soup packet + the 4 cups of water. Stir to dissolve the beef base and soup packet.

    Start heating on high as soon as you add the liquid into the slow cooker.

    Add the carrots, celery and onions and cook for 4 hours on high.

    After 4 hours, add the slice mushrooms, tomatoes and the green beans. Lower the temperature to warm and let cook for another 4 hours minimum. (We cook it over night in low)

    Check the broth for flavor. Adjust to taste

    This is where you can add a pinch of salt, teaspoon of pepper and a teaspoon of Granulated garlic. These are at the sole discretion of the of the soup artist.

    Feel free to add any other veggies you desire.

    FYI: A couple of dashes TABASCO in the individual bowl taste great!

    Edited to add nutritional info (we figured this makes about 24 cups of soup). For a 1 cup serving:

    Calories: 35

    Carbs: 7

    Fat: 0

    Protein: 2

    Sodium: 338

    Soup is so easy - love it! Here's my quick and dirty ..

    Rice
    Ground beef
    Mixed frozen veggies
    An onion
    2 Beef Oxo packages

    Tastes great and fills the gap! Win/win :)
  • I make an awesome chili...I JUST got a crock pot...so I am experimenting, havent made anything great yet. But here is the chili recipie...I am sure you can adapt to make in a crock pot:

    package of white chili beans
    2 packages of white chili seasoning (or make it yourself)
    one can of diced tomatoes
    1 green tomato chopped
    1 red tomato chopped
    1 green pepper
    1 red pepper
    1/4 of an onion (I like to fry them in olive oil first, then throw them in..you can do raw too if you'd like)
    a dash of garlic salt
    one package of ground turkey
    about a cup or 2 of water (help mix it all in and keep everything moist)

    Mix it all up and crock away! (or without a crock...cook beans and turkey separately...then throw it all in a big pot and low simmer for about 30 minutes.

    this recipe will last 2 people for a week and a half..so I suggest freezing some of it until you are ready to eat it.

    This soup is my latest obsession. It's a recipe I got from a friend, and then modified a bit. Not 100% sure of calories/macros, but it comes out to about 150 calories per cup, I believe.

    Rosemary Sausage Bean Soup

    a drizzle of olive oil
    a bunch of minced garlic - I used a GIANT elephant clove last night when I made this
    one large onion, chopped
    2-3 tsp rosemary, crumbled or crushed up - I usually just crumble it a bit as I'm putting it
    1 package Shady Brook Farms hot turkey sausage links - but you could use any kind, or Al Fresco chicken sausage - whatever
    2 cans diced tomatoes - sometimes I just use one, depending on what I have in the house
    3 cans beans - I usually use white, but last night I used one can red, one can pink, one can chickpeas
    2-3 zucchini or squash, chopped up
    1 bag fresh spinach - can use frozen if you prefer
    32 oz chicken broth
    optional: orzo, cous-cous, quinoa, pasta, whatever - but I never add this; my friend ALWAYS does, though - whatever your preference

    Drizzle olive oil in pan, then add garlic and cook for several minutes.
    Add rosemary.
    Add onion & cook on low until the onions get soft and brownish and delicious.
    Then I usually take the casings off of the sausages and break it up as I add it to the pot.
    Let cook until sausage is partially browned.
    Then I add everything else (zucchini & spinach last).
    Last night I added some cumin, too....gave it a really nice flavor.
    I'm eating this as I type, actually. NOMNOMNOMNOM.

    ETA: P.S. Is really good with a handful of parmesan cheese on top, too. :)

    Fish stock, dashi, miso paste, red cabbage, green cabbage, onion, garlic, celery, carrot, and really whatever other veggies you want (sometimes I use asian mushrooms).

    I chop up raw shrimp or prawns and green onions with a dash of soy sauce, put that in the bottom of a bowl, and pour the hot soup over it....

    I didn't go through the 13 pages of replies to see if this was posted, but it is my absolute favorite. It was not written to be made in the crockpot, but can easily be adapted for it...so good! even my semi picky 6 year old loves it.
