I love asparagus too! I make it simple , little salt, black pepper, lemon juice, steam and eat.
I put them in omlettes with some norwegian bergenost cheese , its so good.
or this: chicken asparagus curry over rice
3 cooked chicken breasts cut into bite size pieces
cut frozen asparagus into bite size pieces
(cut while frozen is easiest, then let semi thaw)
in a glass pyrex baking dish,
spray with non stick spray
add chicken, top with asparagus then:
in a bowl mix:
1 can low fat, low sodium cream of chicken soup
3/4 cup lite mayo
1 tablespoon lemon juice
1 tablespoon worcestershire sauce
2 tablespoons yellow curry powder.
spoon over top of chicken and asparagus (no need to mix just lay it on top) then:
top all that with low fat shredded cheese any flavor you like best will do
I like the cheese blends then
sprinkle the top with a handful of italian bread crumbs and finally:
bake at 375 for 30-45 mins until bubbly golden brown on top.
serve as is or over brown rice.
*option instead of aparagus you can use a bag of frozen thawed broccoli too.0 -

Balsamic Asparagus and Cherry Tomato Salad

Ingredients
· 1 1/2 pound asparagus, (about 40 spears)
· 1 cup cherry tomato(es), about 10, cut in half
· 1 Tbsp balsamic vinegar
· 2 tsp orange juice
· 1 tsp minced garlic
· 2 Tbsp shredded Parmesan cheese (I omit this; don't think it's necessary.)
· 1/8 tsp table salt, or to taste
· 1/8 tsp black pepper, or to taste
Instructions
· Chop woody ends off asparagus. Microwave for 2 to 3 minutes, or cook in boiling, salted water until barely tender, about 4 to 6 minutes.
· Plunge into ice water to stop cooking. Drain. Add cherry tomatoes.
· Stir together vinegar, orange juice and garlic; season to taste. Spoon dressing over asparagus and tomatoes.
· Sprinkle with Parmesan cheese.0 -
I have it around once a week. I don't do anything unusual to it though- I spray it with olive oil, then chopped garlic, salt, and pepper and put it under the broiler for 10 minutes or so until it's crispy.0 -

raw baby spinach
sliced fresh strawberries
crumbled goat cheese
pine nuts
diced blanched asparagus
red onions

I add it to my green smoothie each morning. Someone has already commented, but it sure does make your urine smell funny.0

When my hubby and I were first married and on a tight budget I used to cringe at the prices of fruits and veggies. I would only buy what was on sale and pass by the stuff I thought was too expensive. Especially if my hubby didn't like it. My hubby - who works in a grocery store - quickly picked up on what I was doing. He wisely told me I could buy any fruit or veggie in the store regardless of price and - as long as I ate it and didn't throw it away without breaking our budget. The rest of the items in the store is what is more likely to break your budget. If you love it I'm sure you can find something less satisfying to sacrafice without breaking your budget too. It's better to eat well and be well then scrimp and pay more in medical expenses. I love to munch on blanched and chilled veggies. So I just blanch asparagas, green beans, brocolli, and carrots to have as a quick snack in the fridge or to add to a salad or pasta for a quick meal. Be good to yourself and enjoy the asparagas!0

Wrap it in prosciutto, bake at 400 till prosciutto is crispy.
Slather on béarnaise sauce.

I have discovered that if you boil pasta then add asparagus soup to it for sauce its lovely0

I do the proscuitto wrap as well...........blanch my aspragus and wrap half a slice of proscuitto around it..and roast till crispy....high in sodium but low in calories that way.
I also have blanched asparagus and topped with poached eggs.........mmmmmm its very good!0 -
I definitely LOVE asparagus! Wish it was a little cheaper.
My two FAVOURITE ways to eat it:
1) A soup.
This is so simple! Saute some garlic and shallots in a little olive oil in the bottom of your soup stock pot. Add 2-3 lbs asparagus, some chicken stock and water. Boil until soft. Blend in blender. Done! To be decadent, serve with heavy cream and lemon. But a bit of salt and pepper will do. Keeps well in the fridge.
2) Asparagus with balsamic & feta (aka. The way I eat it two or three times a week):
Throw some parchment paper on a baking pan. Line a bunch of the trimmed asparagus in a row. Drizzle with olive oil and top with 3 or 4 cloves of crushed garlic. Cook in an oven at 400* for 8-10 minutes. Remove from oven, drizzle with balsamic vinegar and crumble light feta over top. I cannot tell you how much I love this! Goes very well with some curry talapia!0 -
roasted with a brush of butter, lots of lemon and salt and pepper. My husband once used olive oil instead of butter, and put a bunch of spices on it. wasn't the same.
Or, cut up broccoli, cauliflower and asparagus, toss in a little olive oil, salt, pepper and lemon. Roast until crispy and grate just a little parmasean cheese over the whole thing. I could eat this every day.0 -
I eat it a lot, its good for you.
No interesting recipes as a I just steam it.
It does make my pee smell funny :sick:
Interesting asparagus info: it makes just about everyone's pee smell (within about 15 minutes!), but only about 25-50% of the population has the genetic ability to smell it.

I do love me some asparagus! I love it steamed with a bit of butter and nutmeg. OMG and white asparagus is to die for.

You can add a tablespoon of Italian dressing when you add the asparagus, gives a nice flavor.0
