    I use cauliflower to make a " mock potatoe salad" cut into bite size pieces, microwave cauliflower, but not completely soft, leave some texture, cool, add your other potato salad ingredients, like onion, pickle, boiled egg whites, fat free mayo etc. YUM

    Oh this sounds yummy. Gonna try this ASAP!!

    I use mashed cauliflower to make shepherd's pie instead of potatoes. It took the kids 13 years to figure it out. :D

    I was standing there making my Cauliflower Mash, when I realized I could just throw them into my Vitamix....they blended up
    perfectly. I added Cream of celery soup, onions, 2 pats of laughing cow cheese, microwaved them and they tasted great!

    My son who is visiting from Florida, when I told him what I was making replied that Violet--(his 98 pound very adorable FRENCH
    girlfriend) "Oh yeah, I think that's what V makes"---reallly, a French girl makes these, and you didnt tell me!! Grrrrgh....!!

    Anyway, thanks for the recipe..Now I have to find those Shirataki noodles!!

    This is a great recipe, you can also use 2 spoons of light / fat free mayo instead of condense soup / yogurt.
    Also I sometimes add cooked, soft carrots and / or peas for variation.
