    Why not use something else for your protein? Like Peanut butter with your breakfast? Or have fish instead of chicken?

    one of many i like is

    put breasts in a pan, dump salsa on top, bake until almost done, pull out and top with a sprinkle of mozzarella then cook until done. (more specific instructions would be based on oven type and chicken type/thickness)

    To cook it, I create a "pouch" for the chicken out of tin foil and bake it. Keeps the juices in and the chicken is SO TENDER! I then cut them to serving sizes and freeze them for my lunches during the week. Just be careful pulling it out of the oven. I've had one split on me before and it made a HUGE mess :(

    Try a tikka masala curry sauce. It's actually surprisingly low-cal. and the taste will change you life! It is so amazing! I usually serve it over rice or have homemade naan on the side, but it's just as good on its own if you're aiming for low carb meals.

    This is the pre-made sauce that made me fall head over heels in love with Indian food!

    mustard herb glaze (use dijon and italian seasonings)
    greek yogurt with lemon juice and fresh dill
    mango salsa
    blackened with cayenne (good with rice and beans)
    lightly breaded and drizzled with honey (by the way you can use tons of things for breading like whole wheat crackers etc)
    stuffed with ham & cheese (cordon bleu)
    cilantro and lime with cayenne
    paprika, onions and peppers (chicken paprikash)
    brown sugar, mustard, bit of soy sauce
    blackberry puree
    dried cranberries and pecans...........................................

    I like to bake chicken breasts with teriyaki marinade and put sliced pineapples on top! YUM!
  • almost forgot one of my faves - coconut chicken. lightly bread with shredded coconut. Use coconut milk and egg white for the wash.

    I like to take 1/2 cup Plain Greek yogurt, 4 tbsp parmesan cheese, 1 tsp garlic and some pepper. mix it up and spread on chicken breasts, then sprinkle whole wheat bread crumbs on top and bake.
  • I love my Curry Chicken & Rice.. take frozen chicken tenderloins, sprinkle with curry powder, paprika, and black pepper. Drizzle with olive oil and bake at 350 for about 20 minutes. Meanwhile, dice 1 carrot, 1 small zucchini, and 1/2 onion. Saute veggies in a saucepan with Pam spray only. Add brown rice to the pan (I use Minute Maid Steam Fresh brown rice) and stir. Create a small hole in the middle of the pan and crack 1 egg into the center along with a small pat of light butter. Scramble the egg until cooked and then stir the rest of the rice/veggie mix together. Pull the chicken out of the oven and use some of the juice to keep the rice moist. Serve chicken over rice with a serving of frozen peas (after they have cooked of course). This dish has a nice Indian flavor. My daughter and husband love it also!

Some are more involved, but if you enjoy cooking, they are fun and delicious. I recently made "Chicken Rollatini with Spinach alla Parmigiana" and it was great... freezes well too.

    If you can find chicken/beef "rubs"?, they would be good. I use a Cuban "rub" that contains hot pepper, as well as other spices. I always add chopped garlic to most every meal.
    I also sometimes roast garlic cloves for 7 minutes then add a small amount of butter and "rub" that over almost done chicken.
    All are yummy and good for you!:smile:
    ps- I am glad that my fiance loves salads and garlic as much as me! LoL!

    Drunken Chicken Marinade
    about 1 cup sherry
    about 1/2 cup dry vermouth
    about 1/2 cup extra-virgin olive oil
    Medium onion, minced
    about 4 garlic cloves, minced
    about a tablespoon Worcestershire sauce
    about a tablespoon Dijon mustard
    about 1 tablespoon mixed herbs (Basil, Marjoram, Oregano, Rosemary, Sage, Thyme)
    about 1/2 teaspoon coarsely ground black pepper
    about 1 teaspoon soy sauce



    Balsamic Chicken
    about 1 1/2 teaspoons fresh rosemary, minced
    about 2 cloves garlic, minced
    about a teaspoon black pepper
    about a tablespoon olive oil
    about 1/4 cup balsamic vinegar



    Lemonade Chicken (not as healthy, but OMG!)
    6 ounces can frozen lemonade concentrate
    1/4 cup white wine Worcestershire sauce
    2 tablespoons water
    2 tablespoons red wine vinegar
    2 teaspoons chopped fresh rosemary
    2 cloves garlic, crushed

    I did this a couple days ago. I had a jar of Trappey's sliced Jalapeno's hot in the fridge, so I poured the juice into a quart size ziplock bag (equaled about a cup) then I added 2 tbsp lemon pepper seasoning, 2 tbsp Italian seasoning. I add 2 chicken breast, mush and tossed in the fridge to marinade over night. The next night I removed the breast, and grilled them. I saved the marinade, deluded with water to equal 1 cup and boiled one cup of instant rice in that. OMG! best chicken and rice ever, and it had a little kick to it but wasn't really spicy hot. :)

    I just made skinnytastes's taco chicken chili (I think that's what it's called) and it's SUPER yummy AND has beans for extra protein. It's two cans of diced tomatoes, one small can tomatoe sauce, one taco seasoning packet, kidney beans, garbanzo beans (well whatever beans you like), chili powder, cumin...I added garlic and tumeric b/c I can. Then you add five or six chicken breasts and cook in slow cooker for 10 hours. Shred Chicken and BAM...tons of tasty food that's good for you too.
