Fat free low sodium, delicious microwave potato chips

Here is all you will need:

These are extremely easy to make.

You peel a small potato (140 grams to 156 grams) and then you peel off thin slices. I use a Titan peeler which is the best in my humble opinion. Spray a microwave chip rack and plate with nonstick olive oil spray. I spray the chips themselves with the non stick spray lightly to make the seasonings adhere better. Spray is not needed if you do not intend to season your chips. I sprinkle the chips with NoSalt and/or if I want barbeque style I use Mrs. Dash Southwest Chipotle seasoning. I then put the chips on the rack on the plate & cook in microwave (1000 watt) for 3 & 1/2 minutes. Remove immediately from rack or they might stick to it. Chomp & Enjoy! Sodium is 7.2 to 10 mg for ALL the chips. No fat & calories are 99 to 110 depending on size of the potato (see range above). IMAG0894.jpg

    I wonder how it would work to make them with vinegar and NoSalt? Would the vinegar keep the chips from crisping up? Does anyone else have seasoning suggestions?

    I would maybe try the salt n vinegar popcorn seasoning when they come out... ??? That might work!! Sounds good I love potato chips.

    OK DH brought chips into the house Saturday and thank goodness they were salt and vinegar the only chip I can resist. BUT been having a chip craving ever since. Off to microwave!

    Once made I just tested it... You can freeze the chips to keep them longer. They thaw out beautifully and are just as crispy as when they were freshly made.

    Yes, I make them in the morning and pack them for my lunch. They were even still crunchy for an afternoon snack. Except for the two I froze as a test... none of them have lasted longer than that... CHOMP! LOL But, they were crispy out of the freezer a few days later, too.

    I don't know about making fat free doritos... but I have made my own corn tortilla chips. I buy the flat corn tortillas, cut them into chip sizes, spray with olive oil non-stick spray, sprinkle with NoSalt and bake them in an oven. I haven't tried making them in the microwave, but I imagine that would work too. Maybe you could sprinkle them with some kind of cheesy popcorn topping or nutritional yeast to give a cheesier flavor? If you like the ranch doritos, I'd say sprinkle them with a light amount of the dry Hidden Valley ranch salad dressing mix.

    I don't know about that spray you used but just thought I should post about this legal loophole here. This is what I've heard about those baking sprays: If a serving size is less than 1/2 gram, they can round everything down to 0! Look at a can of Pam (100% fat).

    Not that this makes them unhealthy, but just for clarification, if you are spraying them with oil (which is what "cooking spray" is) then they are not "fat free".

    I have those microwave chip racks and don't bother with any spray at all and they are very crispy. The easiest way to slice the potatoes very thinly is with a mandoline. They aren't expensive.

    I appreciate the warnings about the spray, but I do not coat the chips with it. It is the barest light mist for 1/2 a second or whatever just so seasoning will stay better when doing flavors.

    I tried to make NoSalt & vinegar chips, but they were disappointing. The method I used was to coat them by drizzling them with cider vinegar & then sprinkling with NoSalt. I found them to be quite bland. I preferred the plain or chipotle. Nothing ventured... If any of you comes up with a good recipe for those, let me know.

    Update: I tried making them without peeling the potatoes & just shoving the whole potato into the processor to slice them up fast. It makes thicker chips that take longer to cook, but were delicious. Leaving the skin on in a thin ring around the edges left the benefits of all the vitamins and fiber that are in the skin. And they were still just as delicious. I also tried a tip from another MFP pal... You can make these without the special tray. Just line the glass tray of the microwave with parchment paper & spread the chips out on it to cook. Oh yeah, and I did try skipping the spray. The seasonings did not stick as well, but they did still come out tasty. The moisture of the fresh sliced potatoes did cause some of the seasonings to still stick & remain.
