Looking for a simple, GF flat bread recipe
I've Googled my fingers to the bone, and hit up all of my fave recipe sites, and I cannot for the LIFE of me find a decent, GF,simple flat bread recipe. I am living overseas, and do not have access to Whole foods (or any specialty store of the liking) so anything I have to use what would be considered 'specialty food items' (ie, xanthan gum) is out. I do have quinoa almond, and coconut flour

I don't know if this will work for you... it does have some "specialty" items, but offers some substitutions. I made these and they were awesome. Turned out more like a flat bread than an actual pita pocket. The site has other GF bread recipies you could have a look at to. Hope it helps.

I don't know what you want to use the flatbread for, but I was experimenting with the old family cornbread recipe just tonight, trying to make a gluten free substitute for myself as I made the other for my family. This is what I came up with:
Whip with a whisk between each addition:
1 cup buttermilk
1/2 teaspoon salt
1/2 teaspoon baking soda
2 heaping teaspoons baking powder
2 eggs
1 cup corn meal
Cook like a pancake on an oiled skillet over medium heat, turning when bubbles have formed over the entire pancake.
I made mine with about 1/4 cup of batter each which made a pancake about 5 inches across. They held together well and could be used to roll upor top with other ingredients. Good luck.0
