Looks Christmassy! I particularly like the tomato on the bottom. And, for me, a little garlic butter would really make it work.

    awesome.

i usually put so many veggies in my eggs that they risk falling apart. putting them in a pepper shell is genius.

For best results, make sure the pan is HOT and the egg is fresh. Otherwise, it will just leak out everywhere.

^^ If your pan is too hot, you're just going to burn the bottom of the egg.

I do a similar idea, but with silicone rings instead of disgusting vegetables, and then I put it on English muffins, usually with cheese and sometimes with a slice of meat. So good!

I always poke the yolk so that it all spreads out to a uniform thickness, too.

I would also suggest poaching the eggs by putting some water on the pan after your eggs are in place, and then putting a lid on top. Add some pepper on those bad boys, while you're at it.

Just kidding about the disgusting vegetables thing. Kinda.

30 years ago when I worked at McDonalds, we made the egg McMuffins in a ring. Very similar to that. I can't believe I never thought of doing something like this at home.

EXCELLENT idea. I will be cooking this weekend's Breakfast. LOL
