if you don't have people to eat all those cookies at once you can freeze the dough! i like to make a batch for 24 cookies and cook 6 max. then i roll the rest of the dough into balls and freeze it, that way i can just take out a few when i want cookies and cook them. also useful if friends are coming over - you'll have fresh baked cookies every time!

We are starting a "healthy" food co-op exchange at work on Mondays. We will bring baggies, label general calorie information and swap for what we think looks good. I think I wlll make these as one of my exchange snacks.
