    One laughing cow light cheese triangle spread on a pumpkin and oats ryvita topped with a couple of slices of wafer thin smoked ham. Delicious!

    Sweet onion ryvita for me but exactly this - I am so glad I am not only one!!!
  • I layer two slices of turkey and spread the LCC all over it. Then I put five green olives in the middle and roll it all up. YUM!

    We take 3 wedges and a cup of fat free milk and heat it till it's smooth to make a "skinny" alfredo sauce. I also add garlic & herbs if I'm not using the seasoned cheese. Use it with pasta, over chicken, on potatoes, or anywhere else you want an alfredo type sauce.

    I am IN LOVE with the olive oil and black pepper triscuits. I have to count them out and put the box away when I have them or I could just keep going and going...:laugh: :laugh: :laugh:

    maybe it's boring, but i love the original creamy swiss with cracked black pepper and olive oil triscuits. they balance one another well...

    Laughing Cow Alfredo Sauce

    3 wedges The Laughing Cow Light Creamy Garlic & Herb
    1/2 cup 1% low-fat milk (I use skim)
    1 Tbsp reduced fat parmesan cheese
    1/2 Tbsp Molly McButter Natural Butter or 1 Tablespoon of I can't believe it's not butter.
    1/2 tsp garlic powder

    Instructions

    In a medium-sized saucepan, combine all the ingredients over a low heat,
    until everything is melted and the sauce is velvety smooth, about 20
    minutes or until it's nice and thick. Serve immediately over hot cooked pasta of your choice.(add
    points for pasta used) This makes enough for two servings of pasta

    I have it on flatbread or tortilla for breakfast with scrambled eggs, bell pepper and onion. I also put it in an omelet and I've seen recipes where you melt it to make a low cal alfredo sauce.

    my gran used to go to weight watchers, and a lady there always called it "happy cow cheese" lol!
    not had it in years but used to be a favourite on toast :D x

    I like to stuff chicken breasts with it!

    swiss and a slice of ham
    garlic herb and broccoli or asparagus
    queso and jalapeno

    Oooh, I recently because a laughing cow girl when a friend put it out this past fall as part of the game munchies.

    I learned that the "light" is just as good, if not better, tasting than the non "light". Can't even tell!

    But. I started out spreading a wedge over a measured serving of Chicken in a Biscuit crackers (or whatever the name is)

    Now, I also like to spread some over a slice of whole wheat toast, and scramble up an egg to put on top. Occasionally maybe some meat too, but usually not. In fact, I just finished having that for lunch about 30 minutes ago! :)

    All of the suggestions sound DELISH!

    Spread on green apple slices with black pepper
    Mixed into my egg white and veg omelette
    Melted over poached chicken and veggies with curry powder
    Blended with avovado and tuna and spread on crackers

    Here in Canada we pretty much only have the plain ones :( I want to try the Swiss. I like them in my scrambled eggs or on a bagel instead of cream cheese.

  • I use them for so many recipes! My favorite, though, is to mix them with my egg whites and cook them in a mug in the microwave.

    I put a wedge in southwest eggwhites and mushroom omelette. Also weight watchers has a similar type wedge--the jalapeno is especially good.
