Chicken tacos or if you have a foreman grill you can grill them and chop up and serve over an easy lettuce and tomato salad with italian or your fav dressing.

Saw this in an earlier post: Crock pot + 6 chicken breasts + 1 jar of salsa + 1 can corn + 1 can black beans. My husband and I make this a lot. Once we substituted the corn for a bag of frozen 3 pepper and onion blend veggies and it was DELICIOUS!!

I have to admit I didn't read the whole thread *hangs head in shame* so this may be here already.
Honey glazed chicken (I have been doing this with legs)
mix 1/4 honey with 1/8 cup Worcestershire sauce and 1/8 cup soy sauce
Place chicken in crock pot, drizzle with mixture
or brush mixture on chicken and bake in the oven

I steam mine in the microwave with half a lemon or lime and some kind of seasoning (chilli, herbs, pepper)... Whatever takes my fancy. :)

For breasts people usually can't get enough of ....

soak in very salty water for 15-30 minutes
    pat dry
    dip in beaten egg
    then seasoned bread crumbs
bake on a cookie sheet for 20- 30 minutes at 350F (I always cut in to the thickest part to make sure it is cooked all the way)

this in my mother's recipe that always yields very good, moist breaded chicken - i don't think the egg and bread crumbs add that many calories, but I haven't entered it into the MFP recipe counter

1 lb boneless skinless chicken breast
12 oz jar of salsa (any kind)

Put in the crock pot on low for 8 hours, shred with 2 forks, let sit about half an hour. I do this almost every week =)
