    The Crock Pot Santa Fe Chicken is particularly good and I prep it ahead of time and throw it in the freezer - then when I want to have it I just defrost and throw the contents in the crockpot! Easy Peasy!! :) One note though - if you are away from home a long time I would recommend substituting chicken thighs for chicken breast - the breast really dries out - even being submerged in liquid! And the calorie difference is negligible (less than 40 calories per serving of chicken).

    mediterranean chicken

    6 skinned chicken thighs, bone-in
    1 can plum tomatoes, drained and cut into chunks
    1 3/4 cups coarsely chopped onion
    1/4 cup pitted kalamata olives, chopped
    2 tablespoons drained capers
    1/4 tsp. freshly ground black pepper
    1 tablespoon olive oil
    1 small lemon

    grate rind and squeeze juice from lemon to equal 1 tsp. rind and 1 tablespoon rind. reserve rind and refrigerate.

    combine other ingredients except chicken.
    spray crockpot with nonstick cooking spray.
    place half the mixture in the crockpot, place the chicken on top, cover the chicken with the remaining mixture.

    cook on LOW for 4 hours.

    garnish with lemon rind.

    beer chicken
    1 bottle of your favorite beer
    2 lbs of boneless, skinless chicken breast
    1 tsp of oregano
    1 tsp of garlic pwd
    1 tsp salt & pepper
    cook 6 hours in crock pot

    doesnt sound good but my picky husband had 2 helpings

    what kind of timer did you buy? often I have to be away from home for 8 hrs but the recipe only needs 5-6 hrs in the crockpot...would love a timer but not sure where to buy or how it works... thx.

    I also use a site called food.com because all of the recipes there include the nutritional breakdown - including calories. It's a free site, and you can look things up like, "Low calorie crock pot meals," or "weight watchers" or whatever. I've actually found a lot of yummy, healthy stuff there! :wink:
