Holy geez everyone! Great looking recipes!
hbunting86 - could you share the "Rich 'n' spicy blade steak casserole" recipe?
Sure - I just randomly made it up with what was in my store cupboard, but it worked great.
Ingredients:
5-600g blade steak
3 tbsp woustershire sauce
2 tbsp tamari/soy sauce
3 cloves garlic, chopped
2 red chillies (or however spicy you like it) chopped including seeds
1 can chopped diced tomatoes in juice
1/2 can baked beans
a few pinches of black pepper
What to do:
Place blade steaks in a casserole dish/dutch oven. You can either leave them whole or dice them. I left mine whole.
mix all other ingredients together in a bowl, then pour over the steaks making sure they're all covered evenly.
Place in a 180 degree oven (covered) for one hour, and then reduce the heat to 130-140 degrees C for a further 2 - 2 1/2 hours. The longer and slower you cook it, the tastier it is.
I served this with grilled zucchini, but anything would work.

Faux fried tilapia and jicama salad
Can I get recipe for that tilapia. Looks delicious. And what is Jicama?
Recipes on their way in PM! And jicama is the yummy vegetale that is like a non-spicy radish. Neutral in flavor and absorbs anything well.
I bought a Jicama once but didn't really know what to do with it, do you have a recipe/ingredients for that salad?0 -

Sure. I'll post a jicama salad recipe. I find you can add it to just about anything as a filler and it takes on the flavor of what you put it with. I will frequently grate it and add to ground meat to reduce calories without affecting taste or texture. I also like it thrown into salads - kind of like a radish but with tons of extra nutrients.
Kippia Salad
Inspired by Kip and Pia Gilbert
15 ounces (1 can) black beans, rinsed
15 ounces white corn (frozen or fresh)
1 red onion, chopped
4 cloves garlic, chopped
¾ pound jicama, chopped
2 jalapenos, seeded and chopped
½ cup fresh lime juice
2 Tablespoons olive oil
1 Tablespoon dried oregano
¾ cup cilantro, chopped
1 teaspoon cumin
2 Tablespoons olive oil
Pepper to taste
Serves: 16
Mix all ingredients and chill for 24 hours. Stir occasionally. Remove from refrigerator 1 hour before serving.
Tip: Try using the pulse setting on a food processor to take the work out of preparing. Protect your hands with rubber gloves when de-seeding the jalapeno – this can save you hours of burning pain.
Serving Suggestion: Serve with tortilla chips. Top chicken or fish.
Options:
• Use fresh or canned beans and corn
• Use any color onion you have available
• Add in a small can of diced, fire-roasted tomatoes
• Stir in 2 diced oranges
Nutritional Tidbit: Jicama is an excellent source of vitamin C. It also packs almost 6 grams of fiber per cup!Faux fried tilapia and jicama salad
